Gingersnap Cookies // Paleo, Nut Free

Happy NEW YEAR!!!

Truth be told, I made these last week.  I’m not going to lie.  I almost said &*^% it to the cookies for Santa this year (BAD MOMMY!!!), but…someone kept me honest.  AND…I’m always on the hunt for a healthier version of a cookie that I love.  Honestly, I set out to make Gingerbread men…decorated and all.  AND THEN…life happened.  So, honestly, we are lucky these cookies happened at all!  Our entire family is a sucker for gingersnaps, so I thought this might be the perfect thing to try.

The biggest dilemma (in my opinion!) is underbaking vs overbaking vs just right baking.  WHO KNOWS??!!  I’m usually a fan of underbaking.  The ooey gooey goodness is spot on as far as I’m concerned.  BUT…when you are talking Ginger SNAP…well, snap leads you towards the more crunchy aspect, no?

I cooked the two batches a little differently.  One for a little longer, and one for a little less.  I’m still on the fence about which one I liked better ha!Blog Paleo Nut Free Ginger Snap Cookies-1 Blog Paleo Nut Free Ginger Snap Cookies-2 What you need…(makes 2 dozen cookies)

  • 1 cup Sun Butter (you could use any nut butter if you have no dietary restrictions)
  • 3 Tablespoons Pure Molasses
  • 2 large eggs, room temperature
  • 2 teaspoons freshly grated ginger root
  • 3/4 cup coconut sugar
  • ¼ cup coconut flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground pumpkin spice (originally called for all spice)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon sea salt
  • A pinch of freshly ground pepper (sounded weird to me, but I went with it ha!)

What to do…

  • Preheat oven to 350 degrees.
  • Line two baking sheets with parchment paper.  I wouldn’t skip this as they really are pretty gooey and sticky.
  • In the bowl of a stand mixer with a paddle attachment or by hand, beat together the sun butter, molasses, eggs and freshly grated ginger until smooth.  It’s STICKY, as an fyi, so hand mixers won’t work as well because they just get really stuck in all the blades…I actually tried, and then switched over.  Not a deal breaker, just a warning 🙂
  • Into a medium bowl, sift together coconut sugar, coconut flour, baking soda, ginger, cinnamon, pumpkin spice, salt and pepper.
  • Slowly add the sugar and spice mixture to the almond butter mixture while mixing on low until just combined.
  • Drop the dough by the rounded Tablespoons about 2 inches apart on the prepared baking sheets.Blog Paleo Nut Free Ginger Snap Cookies-3
  • Bake for about 10-12 minutes of you want a softer cookie go on the 10 side, crisper on the 12 side.
  • Cool 2 minutes on the baking sheets out of the oven then transfer the parchment paper with the cookies to wire racks to cool completely.Blog Paleo Nut Free Ginger Snap Cookies-4Maya deciding exactly which one she wanted 😉 Blog Paleo Nut Free Ginger Snap Cookies-5 Blog Paleo Nut Free Ginger Snap Cookies-6

Silk Top + Flares for a holiday or NYE Outfit

So, I never posted what I ended up wearing to the Huz’s holiday party.  I had option one (Silk Romper + Booties) and two (All Black!) all lined up, but they both got vetoed in the end.

I ended up going with this one, because it was a little warmer, more comfortable, and could go be seen as somewhat casual yet also dressy since I wasn’t completely sure what others would be wearing.  There were people more dressed up and also more casual at the party, so I was super thankful I went this route.

I never end up getting pictures on the nights I go out, because usually I get ready 20 minutes before we leave.  Then, there’s no time and it’s too dark!  So…I threw on this outfit again when I happened to have day 2 of straightened hair. 😉

It was a WINDY day, and I had about 5 minutes, in an alley a block away.  Such is life…

Could be an inspiration for a NYE outfit??  I will most likely be in my sweats… 😉Blog Ramy Brook Silk Top DL1961 Roxy Born Tortoise Heels-1 Blog Ramy Brook Silk Top DL1961 Roxy Born Tortoise Heels-2 Blog Ramy Brook Silk Top DL1961 Roxy Born Tortoise Heels-3

Lemon and Lime Juicing Tips

Making holiday cocktails with lemon or lime juice? Here’s a quick tip on juicing. First, get yourself a lemon squeezer. Not fancy, you can get a decent one for around $10. They come with single or double ‘bowls’. The double fits a lemon and lime separately, but single works fine!

Once you are ready to do some juicing, slice the lemon in half and instead of placing it into the bowl peel side down, simply turn it cut side down. Now when you press the handles together, the juice will not spray everywhere. Seems obvious now, but it wasn’t at first, so I wanted to pass this little tip along to make your juicing one step less sticky! 🙂

More festive cocktail recipes forthcoming. Have a great rest of 2015!

Family Pictures…didn’t think they were happening for 2015

And then…a holiday miracle was bestowed upon me!!  My brother decided to come up and visit this last weekend, and it was pretty much instantly decided between me and my mom-FAMILY PICTURES!!!

We had all been to Maui over the summer for my parents 45th wedding anniversary (a couple posts can be seen here and here), yet due to all the various activities with 3 families the only picture we got of ALL of us was one taken by a waiter at one of our family dinners :{  I even brought my tripod!!!  It never saw the light of day though…sigh.

And don’t get me started on my immediate family.  With a teenager that works while also taking college courses, another teenager who is in high school and sports year round, a husband who travels half the week, and me who works on the weekends…oh, and rainy Seattle.  Our family pictures had just fallen by the wayside this year…

And…I’m not going to lie.  I was bummed.

And then…it happened!

My mom got these of me…Blog StyleMint Scarf Joie Tambrel Sweater DL1961 Emma Lola Keim Booties-1Yup.  Every once in a while, I call to my daughter like she’s a dog 😉Blog StyleMint Scarf Joie Tambrel Sweater DL1961 Emma Lola Keim Booties-1-And then…Because she needed a little warming up, and me being a monster seemed appropriate ha!  THIS is what family pictures really consist of haha 🙂Blog StyleMint Scarf Joie Tambrel Sweater DL1961 Emma Lola Keim Booties-2 Blog StyleMint Scarf Joie Tambrel Sweater DL1961 Emma-3 Blog StyleMint Scarf Joie Tambrel Sweater DL1961 Emma-4 Blog StyleMint Scarf Joie Tambrel Sweater DL1961 Emma-5In another post, I’ll show how cute these boots are!  I found them for $4, and then later realized they retailed for over $100!  SAY WHAT?!!Blog Gap Kids Jean Jacket SweetLukaMo Forest Native Dress Naturino Boots-1Seriously, DYING!!!  Her dress….it’s the PERFECT twirl dress, which she happily did all around our house.  In the cold with a bunch of layers…not so much.  Thankfully, I bought it in a size 6 hahaha.  SO…be prepared to see this dress and another one just like it a LOT!  SO CUTE! Keeping it Real…
I’m still not getting my act together to send out a CARD this year, and I’m trying to still absolve myself of that.  I could send a Happy New Year’s Card, and honestly, I made one up.  BUT…there’s still the addressing and stamping, and I’m still behind on so many client’s stuff, so…this year.  It’s not going to happen.  My one big guilt is that I don’t have a massive way of telling people.  Not many of my friends or family know about this blog and Facebook is sporadic at best on sharing, but…so be it.  I’ll try and do better next year.
OH, AND!!!
You guys…for those new to the blog.  THIS happened last year, so honestly, my bar was set pretty low hahaha.  I can laugh about it now… Maya is super happy and chill as long as she doesn’t realize “PICTURES ARE BEING TAKEN!”  And, since I take most of our images with a self timer and tripod, or while she’s playing- she doesn’t get it.  Thankfully, I have a solid knowledge of Photo Shop, and took a butt tone of pictures to make sure we had ONE good image, yet…the stories are priceless.
Seriously…DYING about the Huz and Maya.  Me, Charlie, and Jackson are like “KEEP SMILING THROUGH THE MADNESS!!!!” ha!Blog outtake Family Pic 2014

Comfy Everyday Play…

I’ve posted a few holiday looks recently, but let’s be real, those aren’t the day to day!  Most of you know our day to day, but as a refresher-this is it.  Me=hair in a bun, my parka, a sweater, jeans, and Converse.  And with the COLD and WIND that we’ve been having, along with the torrential downpours, we haven’t been playing outside for more than 20-30 minutes at a time.  Which means usually running around our neighborhood when we have a break in the weather.

Otherwise, we are inside in at camps or at the gym.Blog HM Parka Zara 7FAM Converse-1 Blog HM Parka Zara 7FAM Converse-2 Blog HM Parka Zara 7FAM Converse-3 Blog HM Parka Zara 7FAM Converse-4 Blog Weatherproof Gap Hudson Kids Boyfriend Jeans Converse-1 Blog Weatherproof Gap Hudson Kids Boyfriend Jeans Converse-2Maya most days wears a dress, but every once in a while I can talk her into jeans 🙂  I scored these adorable Hudson Jeans for $2 back when my favorite thrift store had 75% off all denim for Black Friday.  They are so soft and comfy that she’s actually let me put them on her a couple of times since-SCORE! I used crushed pistachios and pecans, dried cherries, toasted coconut and sea salt to top melted dark chocolate – make this for an easy dessert, hostess gift or party favor! 🙂

Flannel + High Rise Straight Leg Jeans + Booties // Trinity Tree Farm

A week ago Friday, Maya and I met some friends up at the Trinity Tree Farm. We had gone there to get a pumpkin and play in the bouncy houses last October, and Maya loved it!

As a family, we’ve been so ridiculously busy and overbooked that I knew there was a slim chance of us all going to get a tree together.   So, I decided to take Maya and make a play date out of it!

And….what do you wear to a tree farm? A flannel and boots, duh! 😉blog-oxford-trunk-frame-denim-cafe-noir-trinity-tree-farm-1 Blog Oxford Trunk Frame Denim Cafe Noir Trinity Tree Farm-2 Blog Oxford Trunk Frame Denim Cafe Noir Trinity Tree Farm-3

Maya of course fell asleep 5 minutes before we got there, and I didn’t have the heart to wake her up. Instead of chopping down a tree, I picked out one that was all wrapped up already in their already cut section.  All while Maya slept in the car.  Best laid plans….

Finally, I decided to wake her up, and we just ran around and had fun with our friends. I wanted to get some pictures of my friend with her kids in the midst of all these trees. Maya was still a little groggy from her partial nap, and didn’t want me to put her down. So…as she’s hanging off my back, I took a few of my friend. I can’t imagine how ridiculous we looked to anyone watching haha.  But, I got some super cute ones of them.  She then strapped her youngest in a carrier while her daughter ran around, and took a few of me and Maya 🙂 #momlife

All Black… Holiday Party Outfit option #2

I flew down to Austin yesterday to meet up with my husband, who works there for half the week.  His company holiday party is tonight, and this is one of the options I brought with me. The romper I thought about wearing ended up getting nixed because while it’s been warm here during the day, it’s been dipping down into the 30’s and 40’s at night-BRRRR!!!!

So….option 2.  You can never go wrong with all black!Blog Doma Leather MK2K DL1961 River Pedro Garcia Booties-1 Blog Doma Leather MK2K DL1961 River Pedro Garcia Booties-2Envision dozens of cars driving past me right now…AWKWARD 😉 Blog Doma Leather MK2K DL1961 River Pedro Garcia Booties-3 Blog Doma Leather MK2K DL1961 River Pedro Garcia Booties-4 Blog Doma Leather MK2K DL1961 River Pedro Garcia Booties-5 On me…

I took these on a pretty busy street a few blocks away from my house while Maya was in school.  I gave myself 10 minutes, because I had to get back to pick her up.  In those 10 minutes in addition to the dozens of cars driving by were people walking their dogs.  NO…I didn’t feel like a big nerd at ALL!!!! 😉
Oh, and truth be told.  I brought even ANOTHER option, because I’m wondering if this is going to be too dressy…sigh.Blog outtake
