  • As mentioned, select fruits and berries that are in season for you
  • I made this for my Easter Brunch Party and used: pineapple, mango, papaya, raspberries, and kiwi
  • Clean fruit and then slice or dice to your liking
  • Arrange on platter
  • Serve immediately or store covered in refrigerator overnight
  • Enjoy!

Black Silk Shirt Dress…Day to night!

 Ok, let’s just be honest.  I didn’t take this from day to night, but…I want to!!!

I scored this dress on eBay NEW for $32 (new was around $350!) a while ago, and I’m itching to wear it.  I think it could go from day to night easily, but really I’m wanting to wear it on a date night!!  BUT…as a working mom, you have to think “day to night”, because you don’t always have a lot of time to transition!

Papaya and Lime

Papaya is one of those super foods with all sorts of amazing nutrients in it including antioxidants, phytonutrients, vitamins, minerals and special digestive enzymes. When Papaya is in season I will cut it in half to make a ‘boat’, discard the seeds and eat the papaya straight out of the peel. As previously blogged, t’s the perfect Island Breakfast served with coconut milk. I was serving Papaya for brunch the other day though and wanted an easier way to present it, than a “Papaya boat”. Super simple. Cut in half, discard seeds, peel, and slice. Serve with lime wedges!

Thai Chicken, Broccoli, and Peppers with Healthy Noodles

This is one of those recipes that I repeat A LOT!!  In it’s most basic form, I posted it here, but I mix it up all the time with what I add to it.  The sauce is just so good!!  And SO EASY!Blog Healthy Thai Broccoli Pepper Chicken with Noodles-1
Ingredients

For Sauce

    • 1/2 cup Almond Butter (use Sun Butter for Nut free or any nut butter if you don’t have any dietary restrictions!)
    • 1/2 Cup Coconut Milk (I used Light, but full fat would be amazing too!)
    • 3 tablespoons rice vinegar
    • 3 tablespoons soy sauce
    • 1 tablespoon brown sugar
    • 1 teaspoon grated fresh ginger (I cheat and use this)
    • 1 Cup Water

For the rest of the dish…

    • 2-3 bags of Healthy Noodles (or can use any noodle, quinoa, or skip it!)
    • 4-6 Chicken Breasts.  Depends on how many people you have and how soupy you want it.  I use 6 and grill them on our grill.  Less clean up and the flavor is so good!
    • 2 Tablespoons of Olive Oil
    • Salt and Pepper to taste
    • 1 head of Broccoli
    • 1/2 of each of a yellow, red, and orange pepper
    • 1 small onion diced

Directions

  • Marinate chicken breasts in olive oil, salt, and pepper and cook on BBQ 8-10 minutes each side (depending on size) or cube the chicken breasts and cook in a large pan with a little olive oil, salt, and pepper.
  • While Chicken is cooking outside, chop all your veggies.Blog Healthy Thai Broccoli Pepper Chicken with Noodles-3
  • Add a couple Tablespoons of olive oil (I add garlic too!) and cook onions til soft (5-8 minutes)
  • Add in broccoli and peppers and cover to steam cook for 2 minutes.  Just THIS is delicious, so you could stop right here 🙂Blog Healthy Thai Broccoli Pepper Chicken with Noodles-4
  • In a blender, combine 1 cup water with the whatever nut butter you choose, rice vinegar, soy sauce, brown sugar, and ginger. Blend until smooth.
  • Rinse out the noodles with water (that’s IT!!  NO COOKING THEM!!)Blog Healthy Thai Broccoli Pepper Chicken with Noodles-5
  • Add the sauce and noodles to the pan, stir, and let sit for 2 minutes to soak in all the flavor of the sauce.  Again…you could stop here if you wanted to keep it vegetarian.  SO yummy!Blog Healthy Thai Broccoli Pepper Chicken with Noodles-6

Wellness Remedy: Ginger

This one is for all the tired moms out there.. and everyone else who is interested in ginger as a wellness remedy!

I’m traveling in the US this week and have some international travel coming up later this month. How do you stay healthy? People ask. I have two kids in preschool and most of us have been on that plane where you’re surrounded by people sneezing! Cover, please!

When my kids come home with the sniffles I tell them “sleep fixes everything”. OK, maybe I want them to go to bed early when they have the sniffles – but I mostly just want them to feel better and we all want to “get rid of the grouchies” as we call them in our house..

Sleep does do wonders for body and mood! So, sleep is the #1 remedy but sometimes hard for YOU to get when you have young children. My youngest is 3 years old and I am just now starting to have regular full nights of sleep! Yes, I’m a tired mama! Ack! But wow, 7-8 hours of sleep feels amazing. Anyway, I digress.. what else? Ginger! I’m a huge fan of wellness remedies – and at the first sign or onset of a cold will brew myself some super potent ginger tea and then go to bed.

The kids brought home a cold a few weeks ago and I have – so far – completely evaded it! I use fresh ginger at home and bring dry powdered ginger (and/or turmeric!) for the road. Ginger has the additional super power of being really good for your digestion and nausea (read more about nausea remedies here)! Double benefit!

Ingredients

  • Fresh ginger root – rinsed, peeled and grated – or – a teaspoon of dry powdered ginger
  • Hot water
  • Honey (optional)

Directions

  • Boil water and stir in fresh or powdered ginger
  • Enjoy and go to bed! 🙂

HAPPY Easter from us :)

 It had been raining off an on most of Easter Day for us.  To tell the truth, this was the first year we didn’t do any kind of Egg hunt.   Maya never asked, and one of her best friends had a birthday party on Saturday (when most of the neighborhood community hunts were) so… Not sure if I should chalk that up as a mom fail, or a mom win, because…less candy!

We did make a delicious Lemon Pudding Cakes, and honestly, I think she had more fun making those.  Or so I’m telling myself!!

ANYWAYS.  My parents came over for dinner, and afterwards, there was a break in the rain!  I asked my mom if she wanted to go out and take a few pics, and thankfully the answer is almost always yes!  Like Mother, like daughter.  Ok, I take it up a notch, but whatever.

Oh, and did I mention these were after dinner….and a couple glasses of wine? 😉

Guacamole three ways

Avocado + salsa + sour cream + chips = yum! Now you just need a pitcher of margaritas, a cabana by the beach and some Latin music.. OK, even if you don’t have those last three, you can still enjoy chips and guac any day! 🙂 Here, a very simple way to make guacamole three ways – done progressively for max efficiency and ease!

Ingredients

  • Avocados
  • Garlic
  • Lemon juice
  • Pico de Gallo or fresh salsa
  • Greek yogurt or sour cream
  • Salt as needed
  • Tortilla chips

Directions

  • You’ll make the three varieties of guacamole in a progressive fashion – starting simple and adding to it
  • Start by mashing all avocadoes in a bowl
  • Remove about a third of the mashed avocado, add some garlic and/or lemon juice and salt if you wish, and set aside – this is your first bowl
  • With the 2/3rds remaining avocado, mix in some salsa (this is a great quick way to make guacamole) – set aside half of this mixture
  • With the remaining avocado/salsa mixture, add in some yogurt
  • Garnish with extra ingredients!
  • Serve with tortilla chips
  • There you go – guacamole – three ways!

Lemon Pudding Cakes

We made these for dessert on Easter, and they were SO GOOD!!!  While I wouldn’t call these necessarily healthy, they really were surprisingly light and refreshing!  The flavor was amazing too!

I acctually tore this recipe from my Real Simple magazine back in April of 2012.  Yes…I still collect and keep magazine tear outs (even in this Pinterest driven day!!)  I didn’t deviate from the original recipe with the exception of accidentally undercooking them-which I will do again when I make them next time.  It was a huge hit.Blog Real Simple Lemon Pudding Cakes-1 Blog Real Simple Lemon Pudding Cakes-2If this next image doesn’t make your mouth water, I don’t know what will!  And those cute little fingers?  Maya was such a good assistant! What you need…

  • 3/4 Cup Granulated Sugar
  • 1/3 Cup All-Purpose Flour
  • large eggs (separated)
  • 2 Tablespoons Unsalted Butter (room temp)
  • 1 Cup Whole Milk
  • 1 Teaspoon Finely Grated Lemon Zest
  • 1/3 Cup Fresh Lemon Juice
  • 1/2 Teaspoon Kosher Salt
  • 3 Teaspoons Turbinado or Some Other Coarse Sugar

What to do…

  • Heat oven to 350° F.
  • Place six 4-ounce ramekins into a 9×13 Pyrex dish.
  • In a medium bowl, whisk together the granulated sugar and flour; set aside.
  • In a second medium bowl, whisk together the egg yolks and butter until combined.
  • Whisk in the milk and lemon zest and juice. Add the lemon mixture to the sugar mixture and whisk until smooth.
  • Using an electric mixer, beat the egg whites and salt on medium-high until stiff peaks form, 2 to 3 minutes.
  • In 3 additions, gently fold the egg whites into the lemon-sugar mixture.
  • Divide the pudding mixture among the ramekins (about 3/4 of a cup each). Dividing evenly, sprinkle with the turbinado sugar.Blog Real Simple Lemon Pudding Cakes-4
  • I chose to refrigerate mine for a few hours, but you don’t have to.  If you do, the batter will separate, like above, and the end result will be that creamy pudding at the base, and light fluffy cake on top.  If you don’t have time, the separation will be less noticeable, but still delicious!!  Seen in a slightly different variation when I had less time here. 🙂
  • To the roasting pan, add just enough hot water to reach halfway up the sides of the ramekins.
  • Bake until the tops are golden brown.  I accidentally undercooked mine at 35 minutes, and honestly the general consensus was that was a happy accident.  Original recipe says to cook for 40-45.
  • Take out of the pan and let cool on a rack.Blog Real Simple Lemon Pudding Cakes-5
  • I refrigerated mine for a few hours after cooking and the pudding was firm and the top cake was moist.  You can eat them right away, and it will be more like a lemon molten cake.  To each his own, but cold lemon sounded better to me. 🙂
  • Can make one large cake (probably best in an 8×8 pan).  If you do that cook for 30-35 minutes.
