Can we just pretend I took a shower?

Ok, good.  Now let’s carry on.  🙂

Ever since starting this blog, I’ve started dressing up a little more than I have since I started working from home (which was 6 years ago).  The Huz is really liking that part 🙂  I’ve always had the other clothes, but kind of fell into a rut.  When you work from home, are a stay at home mom, or in my case both, it can just be easier to stay in your sweats haha.  Most days, I don’t take my shower until later in the day, which means hair in a bun…  All that said, I feel SO much better about myself when I do get out of my sweats and actually put some thought into my clothes.  Even if I don’t make it into the shower haha 🙂

Healthy (er) Turkey Noodle Casserole | Not Paleo, but SO DELICIOUS!

This is a recipe that was passed down from my Nana (modified a little over the years), and I have yet to meet anyone (besides a vegetarian) that doesn’t gobble it down and get seconds!!  It’s relatively healthy too!  It’s my “go to” recipe to bring to new mom’s or anyone else that is in need of a meal.  The boys always perk up when I tell them that’s what I’m making.  It NEVER disappoints 😉Blog Noodle Casserole-1Ingredients

  • Box of Rotini or Bowtie pasta (I’ve been using the Eating Right Veggie Pasta from Safeway-1/2 a serving of veggies!)
  • Container of ground turkey (not sure of oz since it varies) I’ve been doubling the meat lately for added protein since the boys can go through this entire pan otherwise).  If you double the meat, use a 15×10 pan.
  • Medium yellow onion
  • Jar of your favorite red pasta sauce
  • 8 oz of low fat Cream Cheese (non fat isn’t as good)
  • 1/2 C low fat Sour Cream (I’ve been using a 6oz container of plain Greek Yogurt)
  • 1 C low fat Cottage Cheese (I love the one that has Chive in it!)
  • 1/2 C Green onion chopped
  • 1/2 C Parmesan or mozzarella cheese (I always forget which one it is at the store, and they’re both good ;))
  • Italian Seasoning
  • Salt and pepper to taste
  • 2 TBL of Olive Oil
  • Salt and Pepper to taste

Directions

  • Preheat oven to 350
  • Start boiling your water for the pasta.
  • Put olive oil large a non stick pan.  Add onions and stir for about 2 min (or until they start to get soft).
  • Add ground turkey and sprinkle some Italian seasoning and a little salt and pepper.
  • Hopefully your water is boiling by now and add the pasta in.
  • Stir until turkey is browned and then add jar of pasta sauce
  • Once pasta is done, drain and put back in pot.  Add cream cheese, cottage cheese, sour cream/Greek yogurt, and chopped green onions.
  • Then in 9×13 pan (or 10×15 if you doubled the turkey) layer meat/sauce mixture with pasta/cheese mixture till both are done.  Sprinkle with parmesan and bake at 350 for 30 minutes (add 15 min if casserole was made ahead of time).Blog Noodle Casserole-2

Super Mom Tip

Double the recipe and freeze one later.  Just add 15 extra minutes to the thawed casserole.dit-elle-Lauren

What to wear to the Pediatric Radiologist {I only wish I was kidding…}

 I think I mentioned before that Maya has had some issues for the past 5 months.  We’ve been going to the Dr more times that I can even count.  For sure more times that I want to count.

I love an interesting back…

I don’t know why, but I’ve always been drawn to clothes that look fairly simple from the front, but then have interesting features on the back.  Mullet clothing if you will 🙂  Low back dresses get me every time.  Cut outs, embellishments, and little surprise when you turn around.  Love it!

It was a chunky knit sweater kind of day…

Fun with the fog…or really, just having fun :)

I have been LOVING all the fog we’ve been having here in Seattle.  It’s SO much fun to photograph!  Clients always get excited by sun (so limiting for pictures!), but fog…love it!  Some like sun flare…I like fog flare 😉

Is Halloween for a 2 year old for them…or us?

Please, please, PLEASE say us 🙂  I feel bad for Maya because both her birthday and Halloween fall during my busiest season.  What that means is that all the ideas I’ve had floating in my mind, just get left there and she gets a family bbq for her birthday and butterfly wings I bought off Zulily last year for Halloween…

Paleo Warm Butternut Squash Salad with Apple Cider Dressing

I got this recipe off of the Food Network (scribbled the recipe onto a notebook while watching the actual show not online!).  I’ve made a few changes, but feel free to refer back to the original!  It’s SO yummy, and relatively easy (especially if you cheat and get the pre-cut butternut squash ha!)

  • 1 (1 1/2-pound) butternut squash, peeled and 3/4-inch) diced.  If I’m in a hurry, I grab 2 bags from Trader Joe’s, but I still cut those pieces in half because they are pretty big.
  • 2 tablespoons Olive Oil (I usually just drizzle over the top of the butternut squash and don’t measure :))
  • 1 tablespoon pure maple syrup.
  • Kosher Salt and Pepper to taste
  • 1/3 C Dried Cranberries
  • 3/4 C Apple Cider
  • 2 tablespoon Apple Cider Vinegar
  • 2 Diced Shallots or I’ve also used 1/3 C diced red onion
  • 2 teaspoons Dijon mustard
  • 4-5 cups (or really, you choose depending on how many mouths you have to feed!) of spinach or arugula.  I personally LOVE arugula, but our boys don’t.  When I make this for friends, it’s arugula.  When I make it for the family-spinach.

Directions

  • Preheat oven to 400 degrees
  • Place butternut squash on a large cookie sheet.  Drizzle maple syrup and olive oil over the squash, grind a little salt and pepper over and toss around until coated.
  • Bake squash for a total of 15, but take it out and toss every 5 minutes, and add cranberries on the last 5 minutes (at the 10 minute mark)
  • While squash is baking combine cider, vinegar, onions/or shallots, and a little salt and pepper in a small sauce pan.  Bring that to a boil and stir for about 6-7 minutes so that it reduces.  Take off heat and whisk in mustard.  (original recipe calls for adding a 1/2 a cup of olive oil now, but I forgot to do that once.  It tasted fine, so I’ve left it out ever since :))  You choose!
  • Place salad greens in a large bowl.  Toss in butternut squash mixture and dressing.  Pepper to taste.
  • Online recipe also calls for walnuts and freshly grated Parmesan.  I’m fairly certain the tv show didn’t/or I just forgot to write it down.  In either case, I’ve never added either, but feel free (and let me know what you think!)  I have sprinkled pumpkin seeds on the top for crunch and it was yummy too!

Super Mom Tip

I’ve turned this into a meal (not vegetarian), by adding some sliced aidells smoked chicken and apple sausages into the butternut squash mix at the same time as the dried cranberries.  The flavors all go so well together!

How to make a chalkboard banner | DIY

I made this chalkboard banner a few years ago and have used it SO many times.  I will admit that it wasn’t easy.  I have had lots of practice with power tools, but you could cut out a few steps and achieve the same result.  Here’s what I did…

Step 1-

Go to Home Depot and buy a plain piece of partical board.  Make sure it’s the kind that has a hard smooth surface on one side.  Had this 3/16 in. x 2 ft. x 4 ft. Marker Board (4-Pack) been there that would have been totally cool!

Step 4-

Step 5- (DO NOT use table saw unless you know how to use it)
