This is one of those recipes that I repeat A LOT!! In it’s most basic form, I posted it here, but I mix it up all the time with what I add to it. The sauce is just so good!! And SO EASY!
Ingredients
For Sauce
- 1/2 cup Almond Butter (use Sun Butter for Nut free or any nut butter if you don’t have any dietary restrictions!)
- 1/2 Cup Coconut Milk (I used Light, but full fat would be amazing too!)
- 3 tablespoons rice vinegar
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon grated fresh ginger (I cheat and use this)
- 1 Cup Water
For the rest of the dish…
- 2-3 bags of Healthy Noodles (or can use any noodle, quinoa, or skip it!)
- 4-6 Chicken Breasts. Depends on how many people you have and how soupy you want it. I use 6 and grill them on our grill. Less clean up and the flavor is so good!
- 2 Tablespoons of Olive Oil
- Salt and Pepper to taste
- 1 head of Broccoli
- 1/2 of each of a yellow, red, and orange pepper
- 1 small onion diced
Directions
- Marinate chicken breasts in olive oil, salt, and pepper and cook on BBQ 8-10 minutes each side (depending on size) or cube the chicken breasts and cook in a large pan with a little olive oil, salt, and pepper.

While Chicken is cooking outside, chop all your veggies.

- Add a couple Tablespoons of olive oil (I add garlic too!) and cook onions til soft (5-8 minutes)
- Add in broccoli and peppers and cover to steam cook for 2 minutes. Just THIS is delicious, so you could stop right here 🙂

In a blender, combine 1 cup water with the whatever nut butter you choose, rice vinegar, soy sauce, brown sugar, and ginger. Blend until smooth.
- Rinse out the noodles with water (that’s IT!! NO COOKING THEM!!)

Add the sauce and noodles to the pan, stir, and let sit for 2 minutes to soak in all the flavor of the sauce. Again…you could stop here if you wanted to keep it vegetarian. SO yummy!

- Once Chicken is cooked, dice and add on top. I added Sriracha to mine for a little kick, and it was SO good!!

I triiiiiiiiied to take that gum wrapper out of her hands. She’s obsessed with gum. I kid you not, she probably has 5-6 pieces a day (sugar free!). And she loves to hold onto the wrapper. So, she can spit it out after 10 minutes and give it back to me haha 😉

SO…truth be told, I took the shots above the morning after the ones below. As in no shower, no make up, puffy eyes…yet, when I had 10 free minutes (forgive me)!!!! BECAUSE…I attempted to take shots the night before, and no go. Honestly, I was just going to scrap the post, but I thought, NO! I thought this might work, and it didn’t. Someone else might think it does. SO…I’m posting anyways.
Then… She suddenly snapped out of her funk and wanted to play! Which…is great, but can you just imagine for a second me climbing down a rocky path to follow her in this outfit??!! With my camera??! The entire time, I thought I was only going to snap a few of just me!
We’ve been to/I’ve talked about this particular beach before. It’s ever changing. People bring things here and there, and it’s always a surprise as to what you will find. She found some dinosaurs this time, and was in heaven. She loooooves dinosaurs!!
Obviously, we leave everything right where it is for the next people to enjoy 🙂
And of course, I brought bubbles. Those are always my fall back 😉

On me…
I’m kind of obsessed with cropped denim lately, and the more flare I can get the better. These…not as flared as I wanted, but since they are my favorite denim, I’ll wear them no matter what!
I was on the fence on the asymmetrical design of this top. I’m usually all for “out of the ordinary” when it comes to design, and…I’m glad I went for it. Love the sides of this top!
Soooooo, this was one of those days that Maya was NOT in the mood. AT FIRST. I asked her if she wanted to go play somewhere, and she had a most definitive “NO!”
And…. this is what she wore to gymnastics free play. I always let her pick what she wants to wear. At this point, that is the going rule always. But…for free play gymnastics, she has the option of her normal leotard (mandatory for actual class), or tights and a top. Today, she chose ALL PINK. I am really not much of a pink gal, but Maya….she’s ALL IN! I swear, she looks like a Pepto Bismol bottle some days, and…I just let it go. Because, if she’s happy, I’m happy. Which…took a while, and if I’m honest, isn’t completely true haha. 😉
Her hair too. It was down for gymnastics, and then half way through, she was like…
Oh, and that stamp on her neck? Yeah…they get stamps at the end of class, and Maya always wants them on the back of her neck, forehead, feet, and now…neck. I feel like maybe the fact that I have tattoos might bite me in the ass… ;}
I can’t even tell you how much I love this next image. GAH! She is just too freaking sweet.

What you need…
I mean…

Who loves the dough of cookies even more than the actual cookies? We sure do!! I know everyone’s all scared of salmonella, but I grew up eating cookie dough, and I’m just fine. I even remember they used to sell cookie dough cones at Mrs. Fields!! Yup, I used to get them-SO GOOD 🙂 No chance they could do that now!

Riiiiiiight about now, it started raining. Maya’s in this stage where she does NOT like to get her hair wet. As long as she has a hood or an umbrella, she’s totally fine. But she was having NO MORE pictures after this….
So, we headed over to my parents. This is the only real picture I got of her adorable dress ;{
