Thai Chicken, Broccoli, and Peppers with Healthy Noodles

This is one of those recipes that I repeat A LOT!!  In it’s most basic form, I posted it here, but I mix it up all the time with what I add to it.  The sauce is just so good!!  And SO EASY!Blog Healthy Thai Broccoli Pepper Chicken with Noodles-1
Ingredients

For Sauce

    • 1/2 cup Almond Butter (use Sun Butter for Nut free or any nut butter if you don’t have any dietary restrictions!)
    • 1/2 Cup Coconut Milk (I used Light, but full fat would be amazing too!)
    • 3 tablespoons rice vinegar
    • 3 tablespoons soy sauce
    • 1 tablespoon brown sugar
    • 1 teaspoon grated fresh ginger (I cheat and use this)
    • 1 Cup Water

For the rest of the dish…

    • 2-3 bags of Healthy Noodles (or can use any noodle, quinoa, or skip it!)
    • 4-6 Chicken Breasts.  Depends on how many people you have and how soupy you want it.  I use 6 and grill them on our grill.  Less clean up and the flavor is so good!
    • 2 Tablespoons of Olive Oil
    • Salt and Pepper to taste
    • 1 head of Broccoli
    • 1/2 of each of a yellow, red, and orange pepper
    • 1 small onion diced

Directions

  • Marinate chicken breasts in olive oil, salt, and pepper and cook on BBQ 8-10 minutes each side (depending on size) or cube the chicken breasts and cook in a large pan with a little olive oil, salt, and pepper.
  • While Chicken is cooking outside, chop all your veggies.Blog Healthy Thai Broccoli Pepper Chicken with Noodles-3
  • Add a couple Tablespoons of olive oil (I add garlic too!) and cook onions til soft (5-8 minutes)
  • Add in broccoli and peppers and cover to steam cook for 2 minutes.  Just THIS is delicious, so you could stop right here 🙂Blog Healthy Thai Broccoli Pepper Chicken with Noodles-4
  • In a blender, combine 1 cup water with the whatever nut butter you choose, rice vinegar, soy sauce, brown sugar, and ginger. Blend until smooth.
  • Rinse out the noodles with water (that’s IT!!  NO COOKING THEM!!)Blog Healthy Thai Broccoli Pepper Chicken with Noodles-5
  • Add the sauce and noodles to the pan, stir, and let sit for 2 minutes to soak in all the flavor of the sauce.  Again…you could stop here if you wanted to keep it vegetarian.  SO yummy!Blog Healthy Thai Broccoli Pepper Chicken with Noodles-6
  • Once Chicken is cooked, dice and add on top.  I added Sriracha to mine for a little kick, and it was SO good!!  Blog Healthy Thai Broccoli Pepper Chicken with Noodles-2Enjoy!

HAPPY Easter from us :)

 It had been raining off an on most of Easter Day for us.  To tell the truth, this was the first year we didn’t do any kind of Egg hunt.   Maya never asked, and one of her best friends had a birthday party on Saturday (when most of the neighborhood community hunts were) so… Not sure if I should chalk that up as a mom fail, or a mom win, because…less candy!

We did make a delicious Lemon Pudding Cakes, and honestly, I think she had more fun making those.  Or so I’m telling myself!!

ANYWAYS.  My parents came over for dinner, and afterwards, there was a break in the rain!  I asked my mom if she wanted to go out and take a few pics, and thankfully the answer is almost always yes!  Like Mother, like daughter.  Ok, I take it up a notch, but whatever.

Oh, and did I mention these were after dinner….and a couple glasses of wine? 😉

Lemon Pudding Cakes

We made these for dessert on Easter, and they were SO GOOD!!!  While I wouldn’t call these necessarily healthy, they really were surprisingly light and refreshing!  The flavor was amazing too!

I acctually tore this recipe from my Real Simple magazine back in April of 2012.  Yes…I still collect and keep magazine tear outs (even in this Pinterest driven day!!)  I didn’t deviate from the original recipe with the exception of accidentally undercooking them-which I will do again when I make them next time.  It was a huge hit.Blog Real Simple Lemon Pudding Cakes-1 Blog Real Simple Lemon Pudding Cakes-2If this next image doesn’t make your mouth water, I don’t know what will!  And those cute little fingers?  Maya was such a good assistant! What you need…

  • 3/4 Cup Granulated Sugar
  • 1/3 Cup All-Purpose Flour
  • large eggs (separated)
  • 2 Tablespoons Unsalted Butter (room temp)
  • 1 Cup Whole Milk
  • 1 Teaspoon Finely Grated Lemon Zest
  • 1/3 Cup Fresh Lemon Juice
  • 1/2 Teaspoon Kosher Salt
  • 3 Teaspoons Turbinado or Some Other Coarse Sugar

What to do…

  • Heat oven to 350° F.
  • Place six 4-ounce ramekins into a 9×13 Pyrex dish.
  • In a medium bowl, whisk together the granulated sugar and flour; set aside.
  • In a second medium bowl, whisk together the egg yolks and butter until combined.
  • Whisk in the milk and lemon zest and juice. Add the lemon mixture to the sugar mixture and whisk until smooth.
  • Using an electric mixer, beat the egg whites and salt on medium-high until stiff peaks form, 2 to 3 minutes.
  • In 3 additions, gently fold the egg whites into the lemon-sugar mixture.
  • Divide the pudding mixture among the ramekins (about 3/4 of a cup each). Dividing evenly, sprinkle with the turbinado sugar.Blog Real Simple Lemon Pudding Cakes-4
  • I chose to refrigerate mine for a few hours, but you don’t have to.  If you do, the batter will separate, like above, and the end result will be that creamy pudding at the base, and light fluffy cake on top.  If you don’t have time, the separation will be less noticeable, but still delicious!!  Seen in a slightly different variation when I had less time here. 🙂
  • To the roasting pan, add just enough hot water to reach halfway up the sides of the ramekins.
  • Bake until the tops are golden brown.  I accidentally undercooked mine at 35 minutes, and honestly the general consensus was that was a happy accident.  Original recipe says to cook for 40-45.
  • Take out of the pan and let cool on a rack.Blog Real Simple Lemon Pudding Cakes-5
  • I refrigerated mine for a few hours after cooking and the pudding was firm and the top cake was moist.  You can eat them right away, and it will be more like a lemon molten cake.  To each his own, but cold lemon sounded better to me. 🙂
  • Can make one large cake (probably best in an 8×8 pan).  If you do that cook for 30-35 minutes.

Leather Jackets + Denim Pencil Skirts…

So, one of my favorite things about thrifting is being able to try trends that you aren’t quite sure about.  You aren’t throwing away a ton of money, and if you end up not liking it…no big deal!  I’ve been randomly obsessed with denim pencil skirts lately….on other people.

I’m going to just mark this one down as “Tried it, but not meant for me!!””

Obviously, it’s clear which category this outfit fell into.

Florals + Cropped Denim + Clogs = Spring!! If you wear it, it will come…

 Or something along those lines, no??  IF, you were around to watch “The Field of Dreams” in 1989!  If not…well, then…I’m old.  All that to say.  At the end of each season, I think we are all itching to wear the next thing.  In spring, it’s florals, shorts, SANDALS, cropped denim, skirts (eh, maybe not for me), CUT OFFS!  Ok, the list goes on.  As well it does in the fall when we are all itching to bundle up and be cozy!  Those days are GONE now, tough!

Our weather has been all over the board lately, which is what it usually is in the last days of winter/first days of spring.  One minute, it’s super sunny and in the 60’s, and then you have 15-20 mph winds and it’s pouring sideways!!

This day was one of those in between days.  So, I busted out a floral top (that I’m sure nobody is used to me wearing!) and cropped denim.  Paired with clogs, which I’ve been questioned about, but…comfort and added height??? WIN, in my book!
Blog Eshtaki Floral Top DL1961 Grace Swedish Hasbeens-1 I’m kind of obsessed with cropped denim lately, and the more flare I can get the better.  These…not as flared as I wanted, but since they are my favorite denim, I’ll wear them no matter what!

I will add that the name “High Rise Straight” is totally misleading.  Slightly ok on the straight (I’d lean more towards calling them skinny, but I think the pair I bought had been hemmed), but in no way are they high rise.  8″ rise is not high (their website says 8.75, and Nordstrom Rack says 11″ UM…what??!!!  NO!  BUT…I forgive them, because all of their jeans are amazing no matter what.Blog Eshtaki Floral Top DL1961 Grace Swedish Hasbeens-2 I was on the fence on the asymmetrical design of this top.  I’m usually all for “out of the ordinary” when it comes to design, and…I’m glad I went for it.  Love the sides of this top!

Mixing Faux Leather with Real Leather…

 I had my doubts on whether this would work, but I was searching for a “night out” look that was also comfy.  Because…well, COMFY!!

Faux leather with real leather??  Oh, and suede booties!?!  But…whatever!  I think it all works, almost because it’s NOT all the same!

Keeping it Real…
One of these days, I’m going to stop attempting to capture a good twirl from myself.  This was not one of these days… 😉
And to TRULY keep it real…this was in the morning.  I hadn’t taken a shower, randomly put some curls in a pony tail (3 minute prep to offset my usual hair in a bun!) and yes…my eyes are all puffy from sleep and ridiculous salt intake from the day before.  BUT…I took these super quick Wednesday before taking Maya to gymnastics, because…it wasn’t raining!!  And, I was trying to think of a girls’ night outfit for the upcoming weekend!  This didn’t make the cut, because simple with a POP won out as seen here.

Every once in a while we deviate from healthy.  And…that is SO OK!!!  Everything in moderation, right??!

This is one of those times.  These cookies represent my childhood!  We made them every holiday season, and every season in between when we wanted to!! ;}

My only sadness is that when we made them as kids they were 1/2 inch thick, ginormous, basically it was a meal cookie!!  In my adulthood, I have yet to recreate the cookie of my youth.  I’ve asked my mom.  Was it my imagination?  NO!  They were absolutely thicker…

So…back to the drawing board.  BUT…the flavor is still the same.  YUM!!!Blog Monster Cookie-1 Blog Monster Cookie-2 Blog Monster Cookie-3What you need…

  • 1/2 Cup Butter
  • 1 1/2 Cups White Sugar
  • 1 1/2 Cup Brown Sugar
  • 4 Eggs
  • 1 Tsp Vanilla
  • 18 oz of Chunky Peanut Butter
  • 18 oz of Oatmeal
  • 16 oz of Chocolate Chips
  • 8 oz of Butterscotch Chips
  • 2 1/2 tsp Baking Soda
  • Optional (we didn’t have either this time, so we didn’t add either) 1/4 Cup Coconut + 3 small bags of M&M’s

What to do…

  • Preheat oven to 350 degrees
  • In a really big bowl or Kitchenaid Mixer, cream butter and sugars
  • Blend in eggs and vanilla.
  • Blend in Peanut Butter and baking soda, and chips/M&M’s.
  • Slowly add in oatmeal.  If you are doing this in large bowl, make sure you have a REALLY strong spoon!  Many a wooden spoons have been broken in the making of these Monster Cookies!
  • Original recipe calls to drop 1/4 cups of batter on cookie sheet and bake for 13-14 minutes, or until the edges get a little brown.  Middle will still look uncooked, but they are super moist and chewy then-aka doughy 😉
  • Can also make the cookies smaller

Ok, truth be told.  I didn’t realize she was going to try and crack the egg.  It didn’t end well…

Overalls + Stripes + Cashmere Wrap + Booties

 This was another one of those days where it had been rainy and 10-15mph winds all day.  Earlier in the day, Maya had had ballet.  We made Monster Cookies for my father in law (recipe coming soon!), and then the rain broke!  I asked Maya to go pick out a dress to get dressed to take some cookies to my parents too.  She wasn’t all that interested in picking a dress, so I suggested one of my favorite dresses that for some reason she never wants to wear.  Suddenly she said “ok”!!!  I got so excited, and totally wanted to get pictures of her in it.
