Oops, we did it again…with Vans slip ons :)

So many times when I’m in the mood to wear something, I’m in the mood for Maya to wear something similar.  I try really hard to make sure we don’t leave the house totally matching (sometimes I’m too braindead and it happens…)  Most often it’s our shoes (like yesterday!).  In my defense, Vans and Converse are so flipping cool and comfortable, that I don’t even think it should count 🙂

Basically, they should be a mom staple…

 I am such a sucker for Converse.  I snap them up every time I see them at a thrift store, and I may have screeched when I saw these silver glitter ones for Maya.  And $4?!!  How could I not???  A little scrubbing on the rubber part, and they look almost new!  Mine are also thrifted.  I think for $10?  Not as good as $4, but I still love them 🙂

Happy Holidays! (from Lauren & Family)

 This holiday card was such a comedy of errors…

Maya falls on a metal toy and gives herself a black eye the day before (thank you Photoshop!!) -> Our kitchen sink broke at 11pm the night before -> the Huz stayed up late trying to fix it -> was too tired to fix it -> He got up at 6am to try some more -> Kept trying for 6 HOURS, including multiple trips to the  hardware store, thus blew through our original 10am shoot time.  Huz FIXES THE SINK! -> Time for Maya’s nap so we decide to try when she wakes up ->  Maya boycotts nap for almost 2 hours and finally falls asleep ->  She wakes up at 5, cranky and hungry -> Light is fading fast, so we decide to just rally everyone up and go for it -> The outfit I had originally had in my head did NOT go well with the kids clothes (which was what I was most worried about) and the Huz hated his sweater… -> Maya is starving and wants a cracker every 30 seconds -> entire shoot lasts 15 minutes from first shutter click to the last shutter click (including cracker breaks).

All that said…(now that 2 months have gone by) I love our holiday card.  It’s us 🙂

Getting back to the reason I wanted to do this blog…

 So, we’ve been blogging for 3 months-wow!  I cannot believe how much fun I’m having and much I look forward to it.  It’s both a time for me and Maya to play dress up, and a time for us to play together.  That said, I’ve haven’t been blogging pics of me and Maya together, which is one if the reasons I (personally) wanted to start this blog.  I always wanted to appeal to moms with their kids.  To show that you can run around and play with your children and still look stylish.  Obviously, I’m excited when people are following us that don’t have kids!  Some of whom are 15+ years younger than I am (crazy!), but I want to stay true to what I am.  An almost 40 yr old (ugh!) mom that loves to hang out with her child and also loves fashion.  Plus, it just hit me that Maya won’t really remember any of this, so these pictures are important!

Cape and Boots! Hmmm, now I feel like a cartoon character…

 I’ve had these boots for…I don’t even know how long!  I’ve only worn them 2-3 times, and never as over the knee.  They have the option of folding them down “pirate boot” style, and that’s how I’ve always done it.  I just feel too…I don’t know.  Self conscious??  Ok, streetwalkerish :{

So, truthfully, this outfit only got as far as the alley haha.  But, I had to photograph it to see what it looked like, because I’m loving all the over the knee boots I’m seeing others wear!

Coconut-Sugar Butter Cookies

Super yummy, crispy & light butter cookies made with coconut palm sugar and almond flour! Let the holiday season begin! Oh wait..  Blog buttercookies1

Ingredients

  • 1 1/2 cups gluten free flour (I used half and half rice flour and almond flour)
  • extra almond flour or unsweetened coconut flakes for rolling cookies in
  • 1 c coconut palm sugar
  • 1/2 cup potato starch (or tapioca flour)
  • 1 tsp cream of tartar
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • dash of salt
  • 2 sticks of cold butter, cut into pieces
  • 1 egg, beaten
  • 1 Tbsp milk
  • 1tsp vanilla

Directions

  • In your food processor, combine all dry ingredients and pulse until well blended
  • Add pieces of butter and pulse until dough becomes crumbly
  • Add egg, milk and vanilla and pulse until dough starts to resemble.. well, dough!
  • Refrigerate for 2 hours
  • When ready to bake, set oven at 350*
  • Shape dough into small balls (about the size of large marbles) rolling some in almond meal if desired
  • Bake for ~12 minutes or until they are golden brown
  • Serve warm or freeze (yummy as a crispy cold snack too!)

Back to Basics…

 I have more black sweaters than anyone in their right mind should have.  I mean literally…  Being black, they all blend together in my sweater shelf, so I forget what I have!

Dinner with the Huz’s boss…

The Huz’s boss came into town last night from Chicago, and took us out to a nice dinner.  I was all excited to get a little dressed up, and even had some options picked out (duh)!  Then…got a call a few hours before go time.  “So, we got done with our meetings early.  He wants to go back to the hotel and change into jeans.”

Salmon, potato and spinach soup

I’ve been making a lot of soups recently – especially since we are having this unusual cold spell with temps in the teens at night and barely above 32 in the day! Brrr…! Hot soup to the rescue – easy, yummy and quick!

Ingredients

  • 2 tablespoons butter
  • 1 leek (white and pale-green parts only) — halved, rinsed and thinly sliced (or 1 onion, chopped)
  • 3 cloves garlic, minced
  • 4-8 small red or gold potatoes, scrubbed and halved (some paleo purists don’t eat white potatoes, so cauliflower would be a great substitute)
  • Salt and pepper, to taste
  • 5 cups vegetable or chicken stock
  • 1 1/2 pounds salmon fillet — skinned, boned and cut into 1-inch cubes
  • 1/2 cup half-and-half (or coconut milk for paleo)
  • 1 tablespoon chopped fresh dill  (I used 1 tsp dry)
  • 5 ounces baby spinach

Directions

  • Melt butter in a heavy sauce pot over medium heat.
  • Add leek and garlic, stirring occasionally, until leek is soft, about 5 minutes.
  • Stir in potatoes and cauliflower; season with salt and pepper.
  • Pour in stock and bring to a boil.
  • Reduce heat to a simmer and cook until vegetables are fork tender, 7 to 9 minutes.
  • Add salmon and simmer until just cooked through, 3 to 5 minutes.
  • Stir in half-and-half, dill and spinach and briefly cook until spinach wilts and soup is heated through.

You can make this paleo by substituting coconut milk for the dairy.

The jeans that can practially walk by themselves…
