Goi Ga | Vietnamese Salad with Chicken

The Huz and I went to Chicago last weekend, and had the most amazing time!  At some point, if I have time, I’ll do a blog post about what we did and where we ate.

One of the restaurants we went to was Le Colonial.  We got some of their Goi Ga, and it was perfection on a hot day!!!  I kept thinking about it for days afterwards, and was inspired to try and make something similar.

I got most of the ingredients at Trader Joe’s.  This isn’t an ad for them, just an fyi 🙂 . Minus the fish sauce…they recently discontinued it, so I went to another local store for that.  Good grief is it expensive?!!  It does make the dressing though…

The dressing typically has chili flakes in it, but I left that out for Maya’s sake.  I added plenty of hot sauce on mine though 🙂

Ingredients (feeds 4-6)

Dressing

  • 1/2 cup water
  • 1/4 cup fish sauce 
  • 1/4 cup rice vinegar
  • 2 Tablespoons freshly squeezed lime juice
  • 2 Tablespoons Raw Local Honey
  • 1 teaspoon minced garlic
  • 1 teaspoon crushed ginger
  • 1 teaspooon crushed lemongrass
  • You can add red chili flakes, but I left that out for Maya’s sake and added hot sauce after :))

I put all the ingredients in a mason jar and shook it up-done!

Salad

  • 9 oz bag of Trader Joe’s Organic Shredded Green & Red Cabbage with Shredded Carrots
  • 1 cup shredded carrots
  • 3/4’s of 10 oz bag of Trader Joe’s Cruciferous Crunch (Kale, Brussel Sprouts, Brocolli, and Cabbage.  (I was going to add the entire bag, but it was a bit much…)
  • 1.75 oz container of Trader Joe’s Organic Micro Greens
  • 1 rotisserie chicken shredded.
  • Optional diced peanuts (Maya is allergic, so I left these out.  If I’m being honest, I totally forgot haha.  I might add almonds next time!)

What to do

Combine all the salad ingredients, top with chicken, and salad dressing.  It’s best to let it sit for a few minutes and keep tossing it to make sure the dressing gets absorbed.

I topped mine with red chili garlic sauce and Sriracha, but it’s nice and refreshing all on it’s own!

Vintage Chemise + High Wasited Crop Flares + FLORAL CROWNS!!

Ugh….these were taken SO long ago (almost TWO months!)

It was such a magical day!

Maya and I went to an event hosted by Kirsty of  The Kirsty Files , Jenn of What Jenn Wore  at Pacific Place.  

I’ve seen some of the events both Kirsty and Jenn have put on, and they look SO fun and always have a creative aspect to them.  When I saw that this event would include the making of a floral crown, I knew I had to ask if kids could come!  Kirsty said yes, so I was all in!

What do you wear to a fashion event…that’s always the question.  I see people dressed to the nines, but that’s not me. Especially if I’m bringing Maya with me.

SO…vintage top, my fav high waisted crop flares, and some comfy sandals-DONE!
I can only hope that she will come to more events with me, because we had the best time!  And…it carried through the entire day!
Here are the floral crowns we made,  And by we….I mean, I made them, while Maya walked around and schmoozed with the guests.  But….let’s be honest.  That was fine by me.  We were both in our happy place!

While it’s not anything fancy…if you asked me to pick ONE outfit to wear (ok, let’s just say one combo, because…omg!!🤣🙈) I’d easily say…

White top + Jeans + Comfy shoe.

I swear I can’t find time to take pics during the day anymore! It’s a blur with Maya’s activities, then home to make dinner.

So, after dinner/post bath pics it is. I’m wearing a bun at least 50% of them time.  I wish I had time to do my hair, but honestly, most days…I don’t.  SO….I’m trying to find fun ways to accessorize the bun-haha!  I’ve tried the head scarf, but can’t quite get it to look good, so…scarf around the bun it is!Lately…when I have time to run out and take pics, it’s almost Maya’s bedtime, so…

She’s in her jammies.  But, I still want her IN the pics if I can coerce her!  If it means staying up a little later, she’s always in 🙂

Like….SEVEN MONTHS OLD!

I used to be so good about blogging, and now, I find that I’m just doing what NEEDS TO BE DONE!!

But I’m attempting to catch up and blog a bunch of photos that we’ve taken, because I can’t let them go undocumented!

These looked current, for what the weather is doing now, but I looked back and they were taken back in NOVEMBER!  hahaha.  Oh, well.

BUT….I love them, and have no idea what was really going on at this point in time, so… sadly I have no documentation other than what I see now.

Healthy Pad Thai | Peanut Free + Gluten Free

This is one of those recipes that I repeat A LOT!!  In it’s most basic form, I posted it here, but I mix it up all the time with what I add to it.  The sauce is just so good!!  And SO EASY!

Sadly, Maya can’t have peanuts or gluten anymore, so I made a few tweaks and made it work!  I sold it as a healthy Pad Thai, and even our 18 year old son had seconds!  Basically a gold medal on healthy cooking there!


Ingredients

For Sauce

    • 1/2 cup Almond Butter (use Sun Butter for Nut free or any nut butter if you don’t have any dietary restrictions!)
    • 3 tablespoons Rice Vinegar
    • 3 tablespoons Coconut Aminos (used in place of Soy Sauce)
    • 1 tablespoon Pure Maple Syrup (used in place of Brown Sugar)
    • 1 teaspoon grated fresh ginger (I cheat and use this)
    • 1 Cup Water

For the rest of the dish…

    • 1 medium onion diced
    • 2 Tablespoons of Olive Oil
    • 1 Tablespoon crushed garlic
    • 1 Teaspoon Ginger
    • 1 of each of a yellow, orange, and purple carrot (or really any veggie)
    • 8-10 Mushrooms diced
    • 2 blocks of Rice Noodles (or can use any noodle, quinoa, or skip it!)
    • 1 Rotisserie Chicken Shredded  (or you can cook chicken separately and shred)

Directions

  • Pull chicken off your rotisserie chicken and shred.  We always buy two chickens every week.  Eat one, then pull all the meat off both to use for another meal!
  • Add a couple Tablespoons of olive oil, ginger, and garlic to a large pan
  • Add diced onions, mushrooms, carrots, and sauté til soft (5-8 minutes)
  • Add back in shredded chicken

Make Sauce…

  • In a blender, combine 1 cup water with the whatever nut butter you choose, rice vinegar, coconut aminios, maple sugar, and ginger. Blend until smooth.

Cook noodles….

  • These particular noodles cook in less than 5 minutes!
  • Add the sauce and noodles to the pan, stir, and let sit for 2 minutes to soak in all the flavor of the sauce.
  • You could leave out the chicken for an amazing vegetarian Pad Thai!

DIY cropped Vintage Overalls + Classic Dr. Scholls Clogs (hello 90’s!!)

 I’ve been coveting these Free People baggy boyfriend overalls for a while now, but I just can’t pull the trigger on anything full priced!!  So…I do what I often do.  After scouring eBay first of course.  I looked in my own closet to see what I could make out of what I already had!

Funny story about these overalls is that I had this exact pair in the 90’s!!  SO bummed I gave them away at some point, but found them again a few years ago thrifting!  They’ve always been a weird length on me though.  Not long, but not cropped enough.  I’ve thought about chopping them SO many times, but could never pull the trigger.  Until…the Free People overalls.  Then….Snip snip!  And I LOVE THEM!!

I’m washing them as I type, and I can’t wait for them to get more frayed at the bottom!

And..another flashback to the 90’s and honestly 70’s (!!), these Dr. Scholls sandals!  I may have them in white and black too… 🙂
Sometimes (ok, everyday) I just want to eat her UP!!!

One of my favorite things about working on these posts when she’s at school.  I get to stare at her cuteness and miss her!
Maya got this frisbee at the YMCA “Healthy Kids Day”, and we finally went out and practiced.

White Off the Shoulder Top + High Waisted Raw hem Skinnies + Ankle Wrap Clogs

We just got home from Maya’s school “Spring Fling”.  Bouncy houses, games, tattoos, book fair galore.

But…I had a much needed Mama’s night out a few weeks ago! 🙌🏻

At our school auction they do a “Mama Dance Party”. A local coffee shop opens up for us and we drink, dance, and let loose…it’s AMAZING! I signed up last year, and of course had to sign up again this year! 💃

Took these really quick before we all walked to all our neighborhood restaurants. At which point I said ✌🏻 to the Huz and kids as I entered one restaurant and they went to another 😂🙈😬😜🍷 Love the back hem of these!
Maya and I had been to a “Tea Party” with her Girl Scout troop earlier in the day so she was a little dressed up for that.  She would happily wear a party dress every day of the week though haha.

Denim Jacket + White Sundress + Peep Toe Clogs + Vintage Wicker Bag (Memorial Day Outfit Inspo)

 I can’t believe it’s already Memorial Day weekend!

Although, we took these pictures a few weeks ago, I thought it would be the perfect Memorial Day outfit inspiration for those headed to BBQ’s and parties.  A white dress might be asking for trouble (hello spills!), but…that’s what stain remover is for, no??! 😉
I am SO obsessed with this vintage bag I scored while I was on a girls trip in Idaho!!  It’s in perfect condition and the bakelite handles and trim are SO amazing!!
I loooooove the color of these clogs!  At first I thought they were pink, but they are the prettiest blush nude that will go with EVERYTHING this summer!
I can’t handle these next ones…LOVE HER!!  AND…The rainbow sunflare I got in these next ones makes me so happy!
She kept tickling me with this, and then…I realized she was really trying to get yellow dust all over my face.  See outtakes 🙂

The gap toothed smile is my all time favorite! I was SO sad that her front two teeth grew in SO FAST!

Tie Front Button Down + High Waisted Flares + Clogs ( + Cherry Blossoms!)

 Truth be told…I kinda forgot we took these!

I had all these ideas for taking pics amongst all the BEAUTIFUL cherry blossoms all around Seattle, but alas…time or lack thereof….

Finally, I decided to stop a along this street a few blocks away on my way to go pick Maya up from school.

It actually got really sunny later, but it was still overcast and chilly earlier as it seems to be lately.  SO, it’s all about layering!
I’m all about tying tops with high waisted jeans vs tucking in.  Who wants the added bulk??

On the way home, we just stopped back off at the same place.
Dying over Maya’s little shirt dress!!  Scored it off eBay from one of my fav sellers in a lot of 4-5 pieces.  She only took pictures of everything folded, so I thought it was a denim shirt.  SO excited when I pulled it out!  Basically it ended up being $3 or $4!!
I wanted to try and get some pics like we did a two years ago.  Not sure I’ll be able to pick her up next year…

Dresses + Hunter Rain boots on the beach!

A few weeks ago, Maya and I went to play on the beach and took some pictures. In my mind, I had ONE shot I wanted to take. Anything past that would be great.  We ended up playing for TWO HOURS, and I kept taking shots here and there, which means…a LOT of pictures!

I’ve been sporadic in my blog posts lately… I kept looking for a reason to come back. A reason to post. The main reason I started this blog was to document US playing. As Maya’s gotten older, that’s gotten harder. She has LOTS of other extracurricular activities that I am involved in, and those have taken a precedence.

BUT…when we do outings just with us? Admittedly, I have to talk her into them at first, but once we are out…2 hours flies by and we are both laughing and having fun! I’m left totally happy and filled to the brim with joy-both creatively (to be honest) and with the fact that I just spent two hours playing with HER. NOT with her other friends on a park play date, not at a sporting event, not sitting on her bed reading (which I DO LOVE!). ❤️
But…OUTSIDE, PLAYING, LAUGHING…THAT makes us both happy! ❤️❤️❤️
I think we’ve both missed it.

I have no idea how often this will happen. It used to be almost every day, but…I will cherish every time it does happen and post the shit out of it! haha
