Banana Quinoa Muffins (4th of July edition :)) // Gluten Free and DELICIOUS

This is my 3rd time making these since I first made them about 3 weeks ago haha.  Our neighborhood has this huge parade, and I thought these would be perfect for before hand (ok, and after too!)  I doubled the recipe from my first attempt, and added some blueberries, craisins, and shaved coconut to the top to make them more festive 🙂Blog Gluten Free Banana Quinoa Muffins 4th of July-1Blog Gluten Free Banana Quinoa Muffins 4th of July-2Blog Gluten Free Banana Quinoa Muffins 4th of July-3Hope everyone has a happy and safe 4th!

Ingredients (Made 21 muffins)

  • 2 Cup cooked Quinoa
  • 4 fully ripe bananas
  • 1 1/2 Tablespoon Coconut Oil
  • 4 Eggs
  • 3 Medjul Dates (pitted)
  • 1/2 teaspoon pure Vanilla
  • 3 grinds of Sea Salt (aka not very much :))
  • 1/2 cup blueberries, craisins, and coconut to sprinkle on top (optional)

Directions

You can do all of it in the Cuisinart or mixing bowl.  One dish-easy clean up-WIN!!Blog Gluten Free Banana Quinoa Muffins-2

  • Preheat oven to 350 degrees.
  • Throw everything into a Cuisinart/Mixer and blend until creamy.
  • Put into muffin tins, greased loaf, or greased ramicans (that’s what I used the first time)
  • After 5 minutes of baking, take out and sprinkle with blueberries, craisins, and coconut.  I waited too long and the top was already too cooked.  They barely stuck, but I wanted them to sink into the muffin a little bit.
  • Bake for a total 18-20 minutes or until top is firm and lightly golden.  I’m a firm believer in slightly undercooking when baking.  It will continue to bake after you take it out, so if you wait until it’s completely firm it’s too done.  You can always do the toothpick test.  Insert a toothpick and if it comes out clean, it’s done.  If it has batter still on it, not yet done.
  • Sprinkle with unsweetened coconut flakes.
  • These are really moist.  I’m not sure why.  They don’t do well if you seal them up in a container, so just leave them out and they will not dry out.

ENJOY!

Happy 4th of July!

Cannot wait for the 4th of July parade later today.  I think this will be the first year that Maya really gets excited about it.  She was still a little oblivious about it last year.

Pretty sure she still won’t be excited about the fireworks though…Blog Joie Genetic Denim Rafe Espadrilles-1 Blog Joie Genetic Denim Rafe Espadrilles-2 Blog Joie Genetic Denim Rafe Espadrilles-3 Blog Joie Genetic Denim Rafe Espadrilles-4 Blog Joie Genetic Denim Rafe Espadrilles-5

Keeping it Real…
The only “keeping it real” I have is that I am so busy with work that I don’t have much time for personal pictures.  These were taken in about 15 minutes, and I was lucky to do that!  Again, big thank you to my parents for watching the Peanut so much while I’m away!!  Oh, and AMEN for children’s Zyrtek.  FINALLY found something that worked on Maya’s hives that she’s been having for the past 6 days.  Still hoping we don’t have to keep taking it for the long term…

Red, white, and Blue // A few days early :)

Red just looks good with white and blue…period.  And, I never think twice about it, until I’m nearing 4th of July, yet…it’s NOT 4th of July.  Then I feel a little weird.  I was this close to wearing red shoes, but changed them at the last minute.  I left Maya’s on though 🙂Blog HM Boho Tunic Hudson Collin Mystique Wrap Sandal-1 Blog HM Boho Tunic Hudson Collin Mystique Wrap Sandal-2 Blog HM Boho Tunic Hudson Collin Mystique Wrap Sandal-3 Blog HM Boho Tunic Hudson Collin Mystique Wrap Sandal-4“Hi Charlie, HI!!!!”  Seeing her brother walking towards us with Max 🙂Blog Carter Blue Boho RWB Slip Ons-1I mean…doesn’t get much cuter than this.Blog Carter Blue Boho RWB Slip Ons-2Blog Carter Blue Boho RWB Slip Ons-3Blog Carter Blue Boho RWB Slip Ons-4On me…

Keeping it Real…

I haven’t taken many pictures of Maya the last 4 days (ok, pictures I want to post), because she has been breaking out with hives mysteriously.  It’s not the first time…and I’m sure it won’t be the last, but it’s been pretty bad these last few days!  Like…50 on each leg, then half that on her arms, her hands swelling up, and 5-6 on her face.  We’ve tried changing up her food every day, but so far it only happens after she wakes up in the morning, then off and on until mid afternoon.  The last few mornings it’s happened before she’s even eaten anything!  Obviously, I took her to the Dr, but…nothing.  So scary, but oddly, she hasn’t even been phased.  Well, with the exception of the manic hyperness 30 minutes after she gets Benadryl, followed by wanting to just sleep next to me in the Ergo… Fingers crossed it goes away as mysteriously as it came in the 5-7 days that the Dr said it would… 😦

Dropwaist Dress + Booties

I scored this Juicy Couture tunic off of ThredUp for $9! Honestly, I got a few things for both me and Maya.  I had a $10 credit for referring someone (they got $10 too-WIN!!  You can too by clicking the link above), so basically it was free! I swear I’m always so impressed when I get a box from them.  They say everything is “practically new”, and it totally is!  There have been a few times when there was a slight flaw (that I would barely notice), and they either sent it anyway (at no charge!) or took it off my order if it wasn’t up to par.  MOST times I’m even more impressed with the item in person than from the pictures!  Anywho…

It’s so easy to throw on and go.  I paired it with another pair of DIY 7FAM cutoffs that were less than $7 at the thriftstore because of a bad hem job.  I’d been wanting to try out a longer cut off and these were the perfect pair to do it with.Blog Juicy Dropwaist Dress 7FAM cut offs Cafe Noir Boots-1 Blog Juicy Dropwaist Dress 7FAM cut offs Cafe Noir Boots-2 Blog Juicy Dropwaist Dress 7FAM cut offs Cafe Noir Boots-3Making sure Dita (Maya’s stick) got some water to drink 😉 Blog Juicy Dropwaist Dress 7FAM cut offs Cafe Noir Boots-4 Blog Juicy Dropwaist Dress 7FAM cut offs Cafe Noir Boots-5I am SO BAD about printing images.  I mean, how do I chose??!!  I think this one might make the cut…Blog CrewCuts Light Levis Cutoffs KidsConnection Sandals-1 Blog CrewCuts Light Levis Cutoffs KidsConnection Sandals-2 Blog CrewCuts Light Levis Cutoffs KidsConnection Sandals-3 Blog CrewCuts Light Levis Cutoffs KidsConnection Sandals-4I had to break it to her that this stick was too big to come home with us 🙂 Blog CrewCuts Light Levis Cutoffs KidsConnection Sandals-5 Blog CrewCuts Light Levis Cutoffs KidsConnection Sandals-6On me…

White Tee + Ripped Jeans

There’s something about the simple combination of a white tee with ripped jeans.  It’s a classic combination that I don’t see ever going out of style.

I love adding a little twist to the classic, and I am a total sucker for a cowl neck.  I love the draping…Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-1I’ve worn these jeans a number of times on the blog.  I love the easy comfort of jeans that are a few sizes too big.  These are the classic boot cut, but rolled and a few sizes too big, they totally feel like a boyfriend style.Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-2 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-3 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-4 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-53 out of the five of these earrings are Gorjana.  LOVE the simplicity of her jewelry!  You can barely see, but the circle disc has a “m” on it 🙂  If you sign up to get emails from them, you’ll get sale notifications.  At the end of seasons, items can go up to 80% off!!Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-6 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-7 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-8Hahaha.  Maya loooooves a good kiss 😉 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-9 Blog 3 Dots Cowl Neck Destroyed 7FAM Mystique Silver Wrap Sandals-10Goffrey and Dita came with us to my parents house for dinner 🙂 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-1 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-2 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-3 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-4 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-5 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-6 Blog Gap Jacket Mini Boden Swing top Joes Jeans White Minnetonka Mocs-7On me…

Keeping it Real…
Once again, if you follow us on Instagram, you know that yesterday was not a banner day.  However, of course, she took a 3 hour nap, which mean…there was something not right. I am so lucky that Maya is so happy most days.  It’s such a lesson in parenting when your kids are being difficult.  Are they playing off your mood (often times for me, YES!)  Are they not feeling well?  Again, a lot of times…yes!  It is SO hard when you are in the thick of it, with them throwing tantrums, etc… You think “What can I be doing differently?!!”  You feel like a failure as a parent… All that to say.  You are not alone.  You and your toddler…NOT ALONE.  Thank goodness they are so flipping cute, no? 🙂

Cutoffs are always so perfect in the summer.  A way to get them on the cheap is at the thrift store (duh :)).  Look for your favorite jeans in a size or two larger than you normally wear.  That way they are looser and more comfy.  If you find some that have a hack job hem or that have been worn at the bottom from dragging, those are usually marked down pretty cheap.  Perfect to turn into cut offs!  You can even do some DIY distressing like I did here.  Or, I’m sure everyone has a pair of jeans in their closet that they never wear anymore.  Perfect way to give them a new lease on life!

So, there was a fire pit in the middle of all the wooden benches (what we are standing on.)  Maya decided to sit and play in it.  Of course, the more I tried to coax/carry her out of it, the more determined she was to sit and then roll around in it!  Coal remnants and all… She was a filthy mess, as was I afterwards, but again…one of the many reasons I love thrifting!  And…why I love Oxyclean haha.  And then she saw the mole hills and was off to play in those 😉

No Bake Almond Quinoa Balls // Gluten Free

Here’s my 3rd recipe using quinoa in “baking”.   FYI, I made the  Banana Quinoa Muffins again but doubled them this time! 🙂  Not to leave the No Bake Lemon Coconut Quinoa Balls out, but they weren’t as big of a hit in my immediate household (sorry Mom!)  My 17 year old said “These taste like healthy cake pops.”  I’ll take it!! 🙂

Once again, the best part of this next recipe is that after you have made a batch of quinoa, the rest is no bake/aka easy!!Blog No Bake Gluten Free Almond Quinoa Balls-1 Blog No Bake Gluten Free Almond Quinoa Balls-2

Ingredients (Made 15 Balls)

  • 1 Cup cooked Quinoa
  • 1/2 Cup Almonds (for rolling)
  • 1/2 Cup Natural Almond Butter (could also use peanut butter)
  •  2 Bananas
  • 4 Medjul Dates

Directions

You can do all of it in the Cuisinart.  One dish-easy clean up-WIN!!

  • Pulse almonds until they are the size of half a grain of rice (or look like quinoa! :), sprinkle on a plate for rolling later)
  • Blend Almond Butter, Bananas, and dates.
  • Add in quinoa and pulse a few more times, just to mix it all together.
  • Take a heaping Tablespoon and form balls in your hand (mine were about 1.5 inches wide).
  • Roll in crushed almonds and place in the freezer.  You can eat them frozen, but they are best after warming up a few minutes.

ENJOY!
