Costco’s Garlic Pepper Pacific Cod with Mango and Avocado Salsa

I seriously could eat this salsa on everything! And…when mangos are in season, we do haha.

I cheated and used Costco’s already marinated cod. Didn’t feel guilty about it at all, because it’s so yummy! You could easily grill up any kind of fish with a little oil of choice, garlic, and salt and pepper to taste!Ingredients (for Salsa)

2 Mangos cut into 1/2 inch cubes.
1 1/2 medium avocados
20 Cherry tomatoes diced
1/4 cup Walla Walla sweet onions diced
Juice from 1/2 a lime
5 leaves of fresh Basil diced
Sea Salt and Pepper to taste
As many filets as you need.

Directions

Cut everything up and toss in a bowl!
Or….if you are short on time, toss everything into a Cuisinart and pulse a few times.
Bake fish according to directions and top with salsa. EASY PEASEY!!

I’m all over the romper trend now. I don’t think there’s ever an outfit post where either Maya or I (usually both!) are wearing something that I’ve scored at a thriftstore or on eBay. I usually don’t dress head to toe in thrift finds, although Maya usually does 😉 This past week, I totally scored though. I was bummed that I missed out on the Memorial Day 50% off sales, but I figured later in the week they’d probably have to replenish pretty heavily. BOY WAS I RIGHT!! I had a 30% off coupon from donating, so I tried my luck and scored this entire outfit for less than $20! Retail, it would have been $400+!!What’s a more classic outfit than a white button down and jeans? I love the fun tribal clog to add a little twist and a pop of color 🙂 And Maya’s entire outfit was less than $5!!! Yes, I scored her TWO pairs of Saltwater Sandals lately for $1.50 each!

And…I meant to take pictures of both of us at the park, but my camera was still at Canon being fixed from the whole sneaker wave incident ;{ I forgot to put the tripod attachment on my back up camera, so…only pics of Maya at the park!And, of course she found a potato bug, because she is absolutely obsessed! And then she dropped him. She didn’t want to move her fit, because she didn’t want to step on him, so she was just squatting looking around for him hahaha. I was dying! Sadly, we didn’t find him… And then she was off chasing dragon flies! On me…

Destroyed Boyfriend Jeans…or 13 year old bootcuts?

I’ve had these jeans for at least 13 years. I’ve worn them so much that they are so thin, soft, and covered with about 10 patches and holes 😉 They were originally a boot cut style, but they’ve stretched out, and I’m a little thinner now. I even wore them when I was pregnant with Maya. They look completely different now than when I first bought them, but I think I love them even more! Did I mention how COMFORTABLE THEY ARE??! And, no. I didn’t cut these. These are purely natural worn to death holes and rips 😉 We were all out playing frisbee after dinner. LOVE SUMMER NIGHTS! On me…

I have all these outfits that I want to wear in the summer, but the reality of life with a toddler that you have to run ragged in order to get a good nap…is this.

Comfortable + Ok being soaked in salt water and sand… 😉 There’s this little hidden beach that we love to go to. Ok, it’s not hidden at all, so I have NO IDEA why more people don’t go to it. BUT…it’s little when the tide is up, so it’s great for May to just run back and forth, and back and forth, and…..back and forth. She ran non stop for over 45 minutes, and the best part was that I didn’t have to chase her down! She was never that far away from me, and there was nowhere for her to go, but…back to me!She found a mini crab carcass and was clenching it in her hand the entire time. 🙂On me…

Keeping it Real…

This keeping it real is a little more scary than I’d like to admit. The last image shows the ferry that came a little closer than all the others. The waves we had been playing in were at most 1 feet high. Right as we were leaving Maya rolled in the sand (duh, toddler). So, I left my bag at the sea wall with my camera, phone, etc. It’s about 20 feet from the tide. I’m washing the sand off Maya, and then I look up to see a 4 feet wave coming at us. This isn’t bad for California, Hawaii, or Mexico…but for our little beach…it was huge! Thank goodness I was holding Maya and washing her off. I grabbed her and ran. By the time the wave hit us, it hit me at waist high. It kept going and splashed against the seawall. Soaking. My. Bag…. My phone ended up being toast. My camera has since been sent to Canon to be looked at (FINGERS CROSSED that it being weather sealed saved my bacon….I can only hope, since it’s my lively hood, and…really expensive sob, sob) BUT…what I couldn’t stop thinking about all night, and what woke me up at 4 am in a sweat. What if I hadn’t been holding Maya at the time? Well, I just have to keep pushing those thoughts out of my mind, because thank god I was!!! Phones and cameras can all be replaced…

I have an obsession with red shoes….

I’m not sure what it is about red shoes, but I’m totally drawn to them! I’m not as big a fan of colorful clothing, but give me all the colorful shoes!!! 🙂And the gold studs and tassle zipper up the back?!! IN LOVE! This is her new thing. I ask for a hug and she tries to kneel on my chest? Not quite the same… She’s still not quiiiiiiiiite 100% after being sick. haha. Walking around the neighborhood took it out of her 😉But, we went back outside after dinner to play frisbee, and she was re-energized! 🙂

Healthy Cherry Garcia

I love anything cherry flavored. Growing up, I always requested cherry chip cake with cherry icing. Everyone in my family groaned, and thus said I only requested it so I could eat the whole thing. While, somewhat true… I mean what kid doesn’t want the whole cake to themselves?? I really did (ok, do…if I let myself make it, which I can’t…) love it!! I’ve come across other die hard cherry chip lovers in my adulthood. Don’t knock it til you’ve tried it!!! 🙂

Anywho! I also love Ben & Jerry’s Cherry Garcia! YUM. I’ve been dying to try to make a healthier version. I succeeded a while back, but was rushed and took horrible pictures.

This week had been hard on both Maya and myself with us both being sick. She’d been abnormally bipolar. We’d been stuck in the house without school or other activities we usually do during the week. I’d been sick too and sleep deprived due to her being sick, so we were both a little stir crazy. All in all…not a good combination. SO…a treat was in order for us both!!

Thankfully, I still had most of the ingredients on hand to try the recipe again! And…I do believe it was even better than the first attempt!Ingredients (serves 4-Maya and I shared the above…it’s a pretty large serving ;))

2 Frozen Bananas (cut into 2-3 inch pieces prior to freezing)
1 cup frozen cherries
1/3 cup Unsweetened Almond Milk
Half of a vanilla bean (slice open and scrape inside out)
Garnish with dark chocolate chips, dried cherries, and unsweetened coconut (optional)

Directions

Put frozen bananas, frozen cherries, almond milk, and inside of vanilla bean in a Cuisinart, or blender and pulse until it looks like this (you might have to stop and stir occasionally. Also, might need to add more Almond Milk depending on the size of your bananas.Maya loves to push the pulse button 🙂 She also likes to get in the way and try eat whatever I’m photographing 🙂 Garnish with the dark chocolate, dried cherries, and unsweetened coconut (although, omit this if you are strict on certain diets). Enjoy! We did 😉

I’d be lying if I said I wore this first outfit anywhere but the sidewalk while Maya was napping haha. BUT…when we came home from the beach and my shoes were all sandy and wet, I thought about changing shoes. It hit me, that a nicer pair would totally change the outfit. SO…we will start with that 🙂And, yes, I’m a wrinkled mess. Sorry…not sorry. These shoes are actually really comfortable!! I love that they add a little height, but don’t make me feel like I’m going to topple over from being out of practice wearing heels! In reality, this is what I wore for most of the day…I’ve had a few clients lately who’s kids don’t want to get dirty. They kind of freak out in fact… It’s actually kind of funny, and I’m sure a mixed blessing. Yeah…that’s not Maya! ;}On me…

For $9, I took this relatively simple and casual outfit, and dressed it up ($4 for the vintage silk scarf, and $5 for the sandals). I scored this super cute vintage silk scarf while I was on my girls trip. I keep wanting to figure out how to wear it in my hair, and a) have it stay put b) not look like I’m totally trying too hard. So far, I haven’t succeeded in either of those, so…instead I wore it as a belt! 🙂 This was supposed to be a hug. Maya had other plans. Does she think she’s in the circus?? Maya calls this her “Rapunzel dress”. I have no idea why, but I totally know what one she means when she asks to wear it. I usually say no (it’s silk…), but since she’d been super sick for the past 4 days, I said yes. Truth be told. Getting out of our self imposed lock down to play dress up for a little bit sounded really nice. Oh, you’re going over there? I see… I know how to get her back though 😉 She’s obsessed with other people’s mail boxes!! And…my jewelry as of late. She found this bracelet of mine and carries it/wears it everywhere. It’s a cuff, and I bent it so it closed. It aaaaalmost fits her.Telling our neighbors how old she is. Nope, not 6…just a double dose of 3!On me…

Comfy Weekend Wear…

Nothing fancy about this outfit… I wore this to photograph a family on Saturday, and I have to be comfy/able to move around/not be worried about getting dirty since I’m usually running around, crawling on the ground, or squatting down to get the shot. I’m loooooving mid to high rise jeans, because I certainly don’t want to be flashing anyone!! Plus, I’m totally liking straight leg jeans rolled lately…And these shoes!? I’m obsessed with them. They are so comfy, yet a little more hip that wearing regular running shoes with jeans. Found a potato bug! I remember loving to play with potato bugs when I was little. She was a liiiiiittle scared to pick him up on her own at first though 🙂I swear she picked out her boots herself after I had my shoes on!!Um…She actually tried to put him on one of these leaves to get him back to nature. He wasn’t having any of that and just crawled up her sleeve…We eventually put him back in a hole in the concrete steps where we found him 🙂On me…

As I’m writing this post, I’m on my 3rd mug of hot lemon, mint, and honey water. I’ll be doing a post soon on the health benefits of this super easy yummy drink. That and all the extra cuddling we’ve logged is about the only upside to the last four days. We have both been knocked OUT! It’s no fun having a toddler sick, but when you are both sick? Oh, and did I mention the Huz is away on business? ;( We are both very ready to get healthy and back to normal!!!
