Balsamic Rosemary Beets

This is a wonderful paleo side dish any time of year. It calls for fresh rosemary but you could also use the dried herb. Beets are nutritious and delicious, especially when roasted and seasoned.

Ingredients

  • 4 medium beets, peeled and cubed
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp fresh rosemary
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp sea salt

Directions

  • Preheat oven to 400.
  • In medium bowl, combine all ingredients and mix thoroughly
  • Transfer to glass baking dish and cover with aluminum foil
  • Bake for 45 minutes
  • Remove foil and bake uncovered, for another 10-20 minutes until beets are tender when pierced with a fork
  • Serve hot, warm or cool

Sage and Rosemary Turkey Breakfast Sausage

The sage give these a delicious “breakfast sausage” flavor. Excellent served with Parsley, Cilantro and Tarragon Pesto.

Ingredients

  • 1 1/2 lbs ground turkey
  • 2 Tbsp minced fresh sage
  • 1 Tbsp minced fresh rosemary
  • 1 Tbsp honey
  • 1 1/2 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 Tbsp olive oil or coconut oil

Directions

  • Combine turkey, sage, rosemary, honey, salt and pepper and mix thoroughly
  • Using a 1/3 cup measuring cup, form the mixture into 8 patties
  • Heat oil in large skillet over medium low heat
  • Cook patties, turning them once and pressing down to flatten, approx. 5-8 mins per side or until golden and crispy (mine turned out more steamed then crispy, but were still good!)
  • Serve and enjoy!

Baked Goat Cheese with Honey, Pine Nuts and Rosemary

This is a super easy, super elegant and delicious appetizer! Bake a patty of goat cheese, topped with Pine Nuts, Rosemary and drizzled with honey.

Ingredients

  • Goat cheese
  • Pine nuts
  • Honey
  • Fresh or dried rosemary

Directions

  • Heat oven to 400
  • Put cheese in oven proof dish and top with pine nuts, and optionally dried or fresh rosemary and drizzle with honey (you can also use fresh rosemary as garnish after this is baked, as shown in the photo)
  • Bake for 20 minutes or until edges are brown
  • Let cool for a bit and serve! Enjoy!

Rosemary Almonds

Ingredients

  • 1 1/2 cups raw almonds
  • 1 tsp maple syrup
  • 1 Tbsp finely chopped rosemary
  • 1/4 tsp sea salt

Directions

  • Heat oven to 350*
  • In a bowl, combine almonds, syrup, rosemary and salt
  • Transfer to a baking sheet and bake until toasted and golden brown, about 10 minutes

Fresh Squeezed Sparkling Orange Juice

This was our Easter brunch drink, super simple, super yummy. The kids LOVE to help squeeze oranges on our little juicer, so you can make this into a fun kid activity and show them where juice comes from! 🙂

Ingredients

  • Oranges
  • Sparkling water
  • Fresh rosemary, thyme or mint for garnish

Directions

  • Juice oranges and pour in glasses
  • Top with a splash of sparkling water
  • Garnish with fresh herbs
  • Serve!
