Warm Artichoke Dip

This is a staple – super easy to make – artichoke dip. Four ingredients, mix well and pop in the oven. Voila! Serve hot with fresh cut vegetables or crackers!

Ingredients

  • 1 can (~14oz) artichoke hearts, quartered
  • 1 can (4oz) chopped green chilis (you can find them with varying degrees of heat, so check the can – mild, medium or hot – whatever your preference)
  • 1 cup grated Parmesan cheese
  • 1 cup mayonnaise

Directions

  • Combine all ingredients
  • Turn into 8 inch round baking dish
  • Bake 350* for 25 minutes or until it starts to turn golden around the edges and bubble
  • Serve warm as a dip with fresh cut veggies, crackers or chips

Smoked Salmon Dip

This is a classic Smoked Salmon Dip with a hint of lemon juice and chopped dill – delicious as an appetizer, great dish to bring to a party, and it can be dressed up or down. Serve with cut vegetables, crackers, or toasted baguette!

Ingredients

  • 8oz cream cheese
  • 2 Tbsp chopped fresh dill
  • 1 Tbsp fresh lemon juice
  • 4 oz smoked salmon, chopped and divided
  • Dill springs (for garnish)
  • Serve with fresh cut vegetables, crackers or toasted bread

Directions

  • Combine first three ingredients in a food processor
  • Add half of the salmon and process until smooth
  • Fold in remaining half of salmon
  • Garnish with dill sprigs
  • Yields 12 servings

Super mom tip: This dip makes very well ahead of time. Simply cover and refrigerate a day in advance.

Apples & Toffee Caramel Dip

Go Seahawks!!!!!!!!!! I’m reposting this as an awesome super bowl game day snack. Totally unhealthy, totally delicious. Super easy to make. Enjoy!

This dip pairs especially well with Honeycrisp (or a tarter) apple!

Ingredients

  • 1 brick cream cheese
  • 1/4 c. brown sugar
  • 1/4 c. white sugar
  • 2 tsp. vanilla
  • 1 bag toffee chips (like Heath toffee bits)

Mix first four ingredients well and fold in chips. Let chill for at least an hour. This makes very well a day in advance.

Honeycrisp apples are amazing with this dip!

Crème Brulee

Crème Brulee! This is one of my all time favorite desserts. Chilled creamy custard is topped by a hard crunchy sugar crust. Serve with some fresh berries and garnish with mint. Yes – there are a lot of steps, but it’s SO worth it. I’ve made this three times now, and this recipe has not failed me yet!

Ingredients

  • 4 cups chilled heavy cream
  • 1/2 cup sugar
  • pinch salt
  • 1 vanilla bean, split in half lengthwise and seeds scraped out
  • 12 large egg yolks
  • 8-12 tsps turbinado or demerara sugar (these are coarser sugars, but you can certainly use regular granulated sugar)

Directions

  • Set oven to 300 degrees and set a pot of water to boil over high heat.
  • Combine 2 cups of the cream, sugar and salt in saucepan
  • Add vanilla seeds including the pod and bring mixture to a boil over medium heat, stirring frequently to ensure sugar dissolves
  • Remove from heat and let steep for 15 minutes to infuse flavors
  • Place kitchen towel in bottom of large baking dish or roasting pan and arrange eight 4 or 5 oz ramekins on towel.
  • After vanilla has steeped, stir in remaining 2 cups cream to cool mixture.
  • Whisk egg yolks in a large bowl and whisk in about 1 cup of the cream mixture, repeat with cups of the cream mixture until all evenly combined
  • Strain through a fine mesh strainer into a pitcher or clean bowl (discard solids from strainer)
  • Pour or ladle mixture into ramekins
  • Now pour the boiling water into the dish holding the ramekins – taking care not to splash water into the ramekins and cream mixture – until water is about 2/3 of the way up the outside of ramekins
  • Bake about 30-35 until the centers of custards are just barely set – an instant read thermometer should register 170-175 degrees at this point
  • Transfer to a wire rack and cool at room temperature for 2 hours
  • Once cool, cover tightly with plastic wrap and refrigerate until cold, 4 hours or up to 4 days.
  • Uncover when ready to serve – remove any condensation that may have formed with a paper towel – and sprinkle each dish with 1 tsp sugar. Shake a little to distribute sugar evenly on top of custard.
  • Ignite torch and caramelize the sugar.
  • Ready to serve or return to refrigerator for no more than 45 minutes
  • Garnish with fresh berries

Buffalo Chicken Dip

This is an old standby for football Sundays, game night and parties, but with baseball Opening Night in Seattle this evening, figured it would be in order to blog about! Thanks Rj for this recipe! 🙂

Ingredients

  • 2 cups of cooked shredded chicken
  • 1 pkg cream cheese (8oz)
  • 1/4-1/2 cup hot sauce (e.g. Frank’s hot sauce)
  • 1/2c blue cheese dressing (ranch dressing if you don’t like blue cheese)
  • 1/2 c blue cheese crumbles (optional)

Directions
Mix everything together and bake for 25 mins @350. Stir once done, serve hot with tortilla chips.

Spinach-Artichoke Dip with Bacon

This is a warm and toasty dip, perfect for fall and winter – it’s great for potlucks, football Sundays, or just good comfort food to snack on! 🙂Blog artichokedip1 Blog artichokedip2

Ingredients

  • 1/3 c mayonnaise
  • 2 garlic cloves, crushed
  • 2x 8oz. packages cream cheese, softened by letting sit at room temp for ~20 mins
  • 3/4 c grated parmesan cheese
  • 5 slices bacon, cooked and crumbled (tip: put slices flat between paper towel and microwave for ~1min per slice)
  • 1 or 2x 14 oz cans quartered artichoke hearts, drained and chopped
  • 1 10oz. package frozen chopped spinach, thawed, drained and squeezed dry

Directions

  • Oven to 350
  • Place mayo, garlic, cream cheese in a large bowl and beat with mixer till well blended and creamy (you can also do this in your food processor – which I’m a huge fan of for quick & easy blending)
  • Stir in parmesan cheese, bacon, artichoke hearts, and spinach
  • Spread mixture into an 11×7 inch baking dish coated with cooking spray
  • Sprinkle with remaining parmesan cheese
  • Bake at 350 for 25 minutes or until thoroughly heated, bubbly and starting to turn golden around the edges
  • Serve with carrot sticks

Super mom tip: This is another dish that freezes super well and can be reheated.
