Sweet Potato, Guacamole, Chicken Sausage, Soft Boiled Egg…Breakfast for dinner?

I know I’m not the only person that loves breakfast for dinner!  And, I also know that it’s kind of a repeat for me, but…it’s easy and DELICIOUS!  Who wouldn’t want that?!

I literally came up with this meal 30 minutes before I was supposed to make it, and it took me approximately 30 minutes to make.  Admittedly, because I ran inside while Maya was playing with our neighbors.  I turned on the oven, peeled and chopped the sweet potatoes, seasoned them, and turned on the pot for the eggs, in…less than 5 minutes.  Then…we played for a few more minutes.

And, precooked chicken sausages are a godsend in our household.  I freeze them for later, and soak them in a warm water bath right before I need them!

Diced up for a pasta meal, or sliced in half for this!  SO easy, delicious, and healthy!

  • One sweet potato (for 2-4 people)
  • Olive Oil
  • Sea salt
  • 3 Pre Cooked Chicken sausage (Depending on the amount of people you want to feed!  I did one per adult, and half for Maya) I love Aidell’s, but there are so many good ones!
  • Avocado (or pre-made guacamole-yes, I cheated on this one!)
  • Eggs (2 for me and the Huz, one for Maya)

What to do…

  • Preheat oven to 400 degrees.
  • Cut sweet potato in 1/2 inch slices
  • Lightly coat in olive oil (or oil of your choosing), and salt and pepper to taste
  • Start a pot of boiling water.  For me, it’s a LOT easier to soft boil eggs for more than two people.  If you want a runny egg and there’s more than 2, it’s way too much for me to manage on top of everything else!!!
  • Bake the sweet potatos in the oven for 20-25 minutes, flipping over half way through.
  • At the half way mark add chicken sausages that are cute in half.
  •  In that time, remove the eggs from the boiling water.  7 minutes = runny yolk, 8 minutes, less, so…I remove ours at 7, and then turn the heat off for Maya’s while ours then run under a cool water bath.
  • Once the sweet potatoes are crispy on the outside, take them and the chicken sausages out.
  • Layer everything and enjoy!dit-elle-Lauren

 

Avocado Sweet Potato “Toast” with a Fried Egg…

I’ve talked before about my love of avocado toast and…having it as breakfast for dinner.  Honestly, we eat a variation of avocado toast with eggs quite a lot for dinner.  Maya requests it all the time, and it’s such an easy thing to whip up, that I rarely say no haha.

We didn’t have any good bread the other night, but we did have a sweet potato.  SO, we unintentionally went the  healthier route haha.  And it was SO GOOD!!!!   • 1 Medium size sweet potato
  • Avocado (amount varies on how many people you are going to feed)
  • Eggs (depends on how many people you want to feed)
  • Olive oil + Salt + Pepper to lightly coat the sweet potato

Directions

  • Preheat oven to 400 degrees.
  • Cut sweet potato in 1/2 inch slices
  • Lightly coat in olive oil (or oil of your choosing), and salt and pepper to taste
  • Bake in the oven for 20-25 minutes, flipping over half way through.
  • Once the sweet potatoes are crispy on the outside, take them out.
  • Fry up your eggs.  I like mine runny, so they only take a few minutes.  I cook Maya’s for a little bit longer, so her yolks aren’t runny.
  • Mash up the avocado on top of the layered sweet potatoes, then top with your egg.
  • Serve as is or with a yummy salad or slaw (check out Esther’s recipes here,  here,  and here.
  • I cheated and used Trader Joe’s Cruciferous Crunch Collection of Chopped Kale, Brussels Sprouts, Broccoli and Green Cabbage & Red Cabbage, and added some bell peppers, tomatos, and avocado.  It was delicious!!!  And Maya chowed the whole thing down 🙂

Soft Boiled Eggs + Bacon on Avocado Toast…Breakfast for dinner!

Breakfast for dinner, you say?  Yes, please!  It’s healthy, easy, and delicious.

When the Huz is out of town, and we don’t have the boys Maya asks for this a lot, and I couldn’t be happier to make it 😉

I honestly think soft boiled eggs, bacon, and avocado each on their own make any dish better, so putting them all together in one dish??  Y-U-M-M-Y!Blog Soft Boiled Egg Bacon on Avocado Toast-1 Blog Soft Boiled Egg Bacon on Avocado Toast-2I don’t think there’s any big secret on how to make this, except maybe how to soft boil an egg.  I like doing it this way sometimes vs over easy in the frying pan.  There’s less mess to clean up, and it’s easier to cook multiple eggs.

  • Bring water to a boil.  Lightly place all eggs into the water and let boil for 7 minutes.  Remove all the eggs that you want to have a runny yolk, and run cold water over them.  If you have a toddler or anyone else that wants their eggs a little more cooked, leave those eggs in the water, but remove it from the heat.  While you are peeling your soft boiled eggs, they will continue to cook in the water.  Take the other ones out after another minute or two and you’ll get a yolk like this.

Heirloom Tomato, Nectarine, Goat Cheese, and Arugula Salad with Avocado Toast + Fried Egg (!!)

I mean, need I say more???  I was inspired to make this salad by the amazing Danielle Kartes from Rustic Joyful Food.  She posted a similar salad on Intagram about 45 minutes before I was supposed to make dinner.  I had everything on hand, but substituted arugula where she used spinach, and then accidentally forgot to put balsamic vinegar on-didn’t need it!!

I paired it with my total stand by when the Huz is traveling (fried egg on avocado toast), and…YUM!!

Salad

  • Handful of arugula or spinach for however many people you have
  • Nectarine sliced
  • Heirloom tomato sliced
  • Drizzle of olive oil
  • Goat cheese
  • Salt and Pepper to taste

Toast

  • Slice of artisan bread (can use gluten free option if needed)
  • Avocado
  • Eggs
  • Chili Flakes, and Salt and Pepper to taste

What to do…

Layer everything on the salad greens and enjoy-how easy is that?!!

For the toast.  I lightly toast my bread, mash the avocado on with a fork, and then fry up your egg.  I tend to only cook mine for 5-6 minutes (with a lid on), so the yolk is still runny.  There’s something so decadent about a runny yolk…

Avocado Toast with a Soft Boiled Egg…

Avocado toast is just about everywhere, and for good reason.  It’s DELICIOUS and good for you too!!  You can keep it pure, or mix it up.  That’s one of the things I love about food and fashion.  You can get inspired by others, and then make it your own.  I got this idea from Frugal Feeding‘s Avocado Puff Tart recipe.  My mouth started watering the minute I saw it…

We got some yummy artisan bread at the Sunday Farmer’s Market, and I just new I wanted to make a variation of his recipe using it.  I had some tomatoes that were on their last legs, so I diced them up, soft boiled some eggs, and dinner was served!  SO easy and delicious-total win!!Blog Avocado Toast with Soft Boiled Egg and Tomatos-1Ingredients

  • Loaf of bread (any kind will do-can even use gluten free!)
  • Avocado (amount varies on how many people you are going to feed)
  • Tomatoes
  • Soft Boiled eggs (I did one per slice of toast)
  • Chili Pepper Flakes
  • Salt and pepper to taste

Directions

  • Slice up some bread.
  • Mash up the avocado in a bowl and season with a little salt and pepper.
  • Dice up the tomotoes
  • Soft Boil the eggs.  Bring a pot of water to boil.  Drop eggs in and let them cook for 8 minutes.  Drain water, and immediately cover with cold water to stop them from cooking further.
