BBQ Pulled Pork Sweat Potato Bun Sandwiches | Whole 30 & Paleo

Truth be told…these were too messy to pick up and eat like a sandwich!  BUT…the flavors are so good together, and it looks so good as a “sandwich”!!

  • 1 Large Pork Loin or 2 small
  • 1 Can of Low Sodium Chicken or Vegetable Stock
  • 1/2 teaspoon crushed ginger
  • 1/2 Teaspoon crushed garlic
  • 2 Medium size sweet potato
  • 1 Medium Avocado
  • 1 Medium to Large Onion
  • Olive oil + Salt + Pepper to lightly coat the sweet potato
  • BBQ Sauce.  If you aren’t on any dietary restrictions use whatever you’d like.  There are lots of healthy options out there that are Paleo and Whole 30 approved.  Try here.

Directions

 

  • Place Pork Loin(s), Chicken/Vegetable Stock, Crushed Ginger, and Crushed Garlic in the crockpot, and cook on low for 8 hours or high for 5.
  • When it’s done, drain all but 1 cup of the liquid.  Shred with a fork, stir it all up in the liquid, and pour half a jar of BBQ sauce on.

  • Light Grill and set to medium heat.
  • Cut sweet potato in 1/2 inch slices (lengthwise not width wise.)  Then they actually look like buns!
  • Cut Onion in 1/2 inch slices
  • Lightly coat both and  in olive oil (or oil of your choosing), and salt and pepper to taste
  • Grill both 7-8 minutes on each side.
  • Layer a flat sweet potato round, pork, slice of grilled onion, slice of avocado, and top with the end piece of the sweet potato!  Drizzle more BBQ sauce over if you’d like!

Crock Pot // Slow Cooker Pulled Pork Sandwiches with Apples, Onions, and Peppers

So, after you made the Crock Pot Pulled Pork with Apples, Onions, and Peppers Stew, what do you do with the leftovers?  Drain the liquid and make sandwiches!!  I’m all about making a meal with the thought that I can squeeze two dinners out of it.  I mean, really what sounds better to a busy mom than that??  Well, besides relaxing on the couch with a glass of wine?  And that is exactly what you can do instead of fussing over your second meal-WIN!!Blog Paleo Crock Pot Slow Cooker Pulled Pork Sandwiches with Apples Onions and Peppers-5Ingredients

Pulled Pork Sandwiches | Slowcooker does 90% of the work-win!

This recipe is in no way original (nor is it Paleo-sorry!), but it’s SO easy and good that I had to share.  The best part?  You take about 10 minutes to get it going in the morning/afternoon, your house smells delicious all day, and then you take about 10 minutes and it’s ready for dinner.  LOVE THAT!

Ingredients

  • Pork Loin (amount depends on how many people you have to feed)
  • 1 Onion
  • 1 Can of coke (or any regular sugared soft drink-most of it gets poured out after!)
  • 2-3 shredded carrots (I cheat and buy the shredded bags from Trader Joe’s :))
  • Jar of your favorite BBQ sauce

Directions

  • Chop onion and place in your slowcooker/crockpot
  • Place the Pork tenderloin on top of the onions
  • Pour the Coke/whatever soft drink you use over the top until it almost covers it.
  • Cook on low for 6+ hours (it won’t get dried out)
  • About an hour before it’s done (or less), add the shredded carrots (you don’t need the carrots.  I just added these the last time I made them for some extra veggies.)
  • When it’s done cooking, drain all but about 1 cup of the liquid.  Shred the pork and add BBQ sauce.

Serve on your favorite bun (we did ciabatta this last time), or serve on a salad for a low carb option!
