Summer Whites…

Chicken, Avocado, Egg Salad in a Bell Pepper Cup // Paleo // Whole30

I’ve been totally inspired by some Paleo and Whole30 recipes on Instagram (mostly @jennaskitchen and @the_clean_wife).  Doing Whole30 would not be an option with our teenage boys (I tried cooking separate meals before, but let’s be honest, ONE meal feels like too much work sometimes!)  I am all about making healthy meals that taste good though!!  The boys and Huz were all gone the other night, so it was just me and Maya.  She eats just about anything, so I figured it would be the perfect time to try something I’d been thinking of making.  Basically a mix of a few things I’ve seen around, plus what I had in our fridge already 🙂

It was DELICIOUS!  So light, yet filling, and unbelievably healthy!Blog Chicken Avocado Egg Salad In Bell Pepper Cup Paleo Whole30-1Ingredients (Would serve 4)

  • 10 grape tomatoes (cut in half)
  • 5 eggs (soft boiled)
  • 1 and a half large avocados
  • 1.5-2 cups shredded chicken breast (one or two large bone in breast depending on size)  I like to BBQ bone in chicken breasts and make extra just to have on hand for a follow up meal like this!  Super easy.  I usually just dust with olive oil and a tiny bit of sea salt and pepper.  Can even just throw it on the BBG plain though, since you peel the skin off!
  • 1/2 and inch slice red onion diced
  • Sea Salt and Pepper to taste
  • 4 Bell Peppers (I like the orange and yellow ones :))

Directions

  • Boil water and cook eggs for 7 minutes.  Take off burner and add cold water and ice until they are cool.  Very important to have them fully cool, in order to peel properly.  Set aside while you make everything else.
  • Toss onions and tomatoes into a Cuisinart (or blender if you don’t have a Cuisinart)  Pulse a few times until chopped.
  • Add in Avocado (salt and pepper to taste.  I barely used any)
  • Add in chicken, and eggs
  • Pulse a few more times just to mix.
  • Slice the top off the peppers, deseed, and fill with mixture
  • Pick it up, get MESSY, and ENJOY! 🙂

When being a clothes hoarder pays off :)

 Well, since I justify my “condition”, I think it always pays off haha.  I’ve never been one to stick with the “If you haven’t worn it in xx amount of time, get rid of it.”  I’ve had things for 5+ years that I’ve never worn, and then all of a sudden it’s my favorite thing!  Or…how about these Birkenstocks that I bought…about TWENTY YEARS AGO???  They have some paint splatters on them, because I thought they’d NEVER COME BACK so I only used them to paint my house :}.  But…I never got rid of them haha.  Now, I’ve been wearing them again and remembering how comfy they were.Blog Free People Top Vintage Levis 501 Birkenstocks-1 Blog Free People Top Vintage Levis 501 Birkenstocks-2Oh, another mullet top?  Shocking 🙂  And this one is air conditioned too haha. Moroccan Milkshake

This is a fabulous smoothie to start the day with! Five simple ingredients: avocado, milk, walnuts, honey and cinnamon!

Ingredients

  • 1/2 avocado
  • 2 cups chilled milk (you can use cow’s milk, almond, rice, or soy – whatever you’re into!)
  • handful of walnuts
  • honey to taste
  • cinnamon

Directions

  • Add first four ingredients to tall glass
  • Use hand blender to mix until smooth
  • Serve immediately with sprinkle of cinnamon

OMG, it has been back to the same happy sweet Maya for the last few days.  I really do think that potty training put her in a bit of a tailspin.  Now that she’s got the hang of it, it’s SO NICE!!!
SO, Mama’s, if you are going through this with your little one, there is hope that it truly is just a phase!  Although, I might be overly optimistic and jumping the gun on my excitement.  I’ll keep you posted 😉

Roast Chicken Salad with Mango Dressing

The days are longer, dinners outside  – I love this time of year and can’t wait for it to get warmer!

Dressing

  • 1 ripe mango, peeled, pitted and chopped
  • 2 Tbsp plain yogurt (or coconut milk for dairy free and paleo)
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp olive oil

Salad

  • 1 head romaine lettuce, chopped
  • 2 cups baby arugula
  • 2 cups chicken from a roast chicken
  • 1 ripe avocado, peeled, pitted and sliced
  • 1/2 mango, peeled, pitted and chopped
  • 1/3 cup toasted, chopped cashews
  • 1/4 cup chopped fresh chives (optional)

I’m thinking of just doing outfit posts Monday, Wednesday, and Friday.  I’m entering into my busy season with work, and honestly these posts take a lot of time.  I LOVE doing them, and honestly have so much fun.  I work on them during Maya’s nap though, and I will need to “work” during Maya’s nap a lot of the days for the next 6 months… Not really sure if anyone even really cares haha, but I thought I’d mention it.  We are going to try and fill in Tues and Thursdays with recipes or DIY though, so there’s something to look forward to!

Greek Yogurt Coffee Cake

This is a recipe that my mom used to make for us all the time when we were kids.  Obviously, not with Greek Yogurt, but I love substituting it into recipes 🙂  It has more protein and is so thick and creamy!

Added bonus, it’s SO easy to make and only has a few ingredients-score!  I made this for our Mother’s Day brunch, and it was a total hit 🙂Blog Greek Yogurt Coffee Cake Ingredients

  • 2 Cups Bisquick
  • 1/4 Cup Sugar
  • 2 Tablespoons butter softened
  • 1 Egg
  • 2 5oz containers of Greek Yogurt.  I used flavored (one honey and one blackberry)
  • 1 Teaspoon Vanilla

Topping

(honestly, this got cut off when my mom photocopied the recipe for me, so I guessed haha)

  • 1/4 Cup Bisquick
  • 1 Tablespoon Brown Sugar

Directions

  • preheat oven to 375
  • Mix all the ingredients for the coffee cake and pour into 8×8 greased pan
  • Mix streusel topping and sprinkle over coffee cake mixture
  • Bake for 30-45 minutes or until cake bounces back to touch.  I prefer under cooking a little 😉
  • Can top with a little more Greek Yogurt and fresh berries

Happy Mother’s Day!

 I’ll start off warning you that this is a monster post.  Every year I ask for pictures as my present (SHOCKING haha).  Now that I’ve figured out the self timer, I have plenty of me and Maya pics (but really, I can never have enough ha!), but getting the Huz in there requires a special occasion 🙂  Luckily my mom asked for the same thing, so it was a given.  Now…that’s not saying it was smooth sailing.  I mean, what family photo shoot ever is??  BUT…so glad we persevered and got some images that we will all treasure for years to come.

Keeping it Real…
I found this quote, when I was trying to think of something to say about motherhood.  Yesterday was a tad stressful because Maya just wanted to RUN, RUN, RUN.  Can’t blame her!  But…trying to wrestle her back wasn’t always the easiest and a few different times, I almost threw in the towel and said let’s bag it.  BUT…we didn’t, and I’m so glad.

“Mothers and their children are in a category all their own.  There’s no bond so strong in the entire world.  No love so instantaneous and forgiving.”

That’s not so say a Father’s love isn’t just as strong or special!  Really, the last sentence is what resonated with me the most yesterday and really lately.  I’ve never experienced love, joy, patience, and fear to the level that I have with Maya.  I love that she calls me her best friend, and we tell each other “You’re my favorite in all the world”  and it’s true.  I am forever grateful for the experience, and could not possibly love this little nugget more.  That said, motherhood is hard (insert apology to my mom and dad for all the shit I put you guys through :{) I wouldn’t trade all the hard moments in the world though, because one little “Sorry Mom” and a big hug, and it’s all mostly forgotten…
