Mango Pineapple Smoothie

Mango, pineapple and coconut give this smoothie a delicious tropical flavor. Not to sweet, not tart.. it’s the perfect summer snack! There was so much smoothie, I made popsicles for the kids as well! 🙂

Ingredients

  • 1 Cup Greek Yogurt
  • 1 1/2 Cup Pineapple (I used frozen, but can also use fresh)
  • 1 Cup Mango (approximately one whole mango, if not using frozen)
  • 3/4 Cup Coconut Milk
  • 1 TBSP Chia Seeds

Directions

  • Blend all ingredients together and enjoy! 🙂

Fresh Squeezed Sparkling Orange Juice

This was our Easter brunch drink, super simple, super yummy. The kids LOVE to help squeeze oranges on our little juicer, so you can make this into a fun kid activity and show them where juice comes from! 🙂

Ingredients

  • Oranges
  • Sparkling water
  • Fresh rosemary, thyme or mint for garnish

Directions

  • Juice oranges and pour in glasses
  • Top with a splash of sparkling water
  • Garnish with fresh herbs
  • Serve!

Rhubarb Ginger Fizz Spritzer

OK, we’ve had the best winter ever this year in Seattle and spring is in full bloom. This means that my rhubarb is also well under way. The young stalks are crisp and tender and perfect for rhubarb recipes. You could make this as a refreshing drink or add a shot of gin or vodka and make it a spritzer. Either way, this would be amazing on a hot summer day.. or any day really!

Ingredients

  • 4 stalks of rhubarb, roughly chopped
  • 1 inch piece of ginger, peeled and sliced
  • 1 1/2 cups water
  • 3 Tbsp honey or agave (or the original recipe called for 3/4 sugar)
  • Limes
  • Sparkling or still water, to serve

Directions

  • Combine the rhubarb, ginger, water and sweetener in a medium pot. Bring to the boil, reduce heat, partially cover with a lid and simmer for 12-15 minutes, until the rhubarb is soft. Remove from heat and cool.
  • Strain the mixture through a fine sieve set over a bowl, using a spoon to press down and extract as much liquid as possible.
  • You should end up with just under 2 cups of syrup. Chill in the fridge for at least 2 hours.
  • Slice limes into thin rounds and set aside. Pour a little syrup into each glass, add a splash of lime juice and top up with sparkling or still water, adding ice if desired. Garnish with a slice of lime and serve.

Mexican Hot Chocolate

Merry Merry Christmas everyone!

Feeling chilly? Need a drink after playing in the snow? This Mexican Hot Chocolate will warm you right up! A delicious blend of spices including ginger and cayenne make this a wonderful steamy drink for a cold winter day.

Ingredients (1 serving)

  • 2 tsps cocoa
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • cayenne to taste (I use about 1/8 tsp, but I like it spicy!)
  • 1 Tbsp agave syrup or honey
  • 1/4 cup water
  • 1 cup milk (or coconut milk)
  • Half ‘n’ half or cream to taste

Directions

  • Mix dry ingredients in a cup
  • Add agave and water
  • Microwave on high for 20 seconds
  • Stir till well blended, add milk and return to the microwave for another minute or until hot
  • Add some whipped cream (optional)

Spicy Cilantro Pineapple Margarita

A variation of the Perfect Margarita – with spicy jalapenos, sweet pineapple juice and chopped cilantro!

Ingredients

  • 1 oz. Lime juice
  • 1 oz. Triple Sec
  • 1 oz. Pineapple juice (fresh or from a can)
  • 2 oz. Tequila (something good like Patron)
  • Cilantro, chopped
  • Jalapeno pepper, a couple of slices, chopped

Perfect Margarita

So simple, so perfect.. Forget heavy margarita mixes with dye and sugars, this is a basic and made from scratch recipe. This is the best margarita recipe we’ve tried and shared with friends. So far, it’s a winner! Tequila, tart lime juice and sweet triple sec are shaken and chilled to perfection! Paleo? Umm… not really. But some claims tequila as the purest alcohol (it’s made from agave) and if you have to drink something, then go with tequila. Call it paleo’ish and say cheers! 🙂

Great with tortilla chips and guacamole!

Ingredients

  • 2 oz. Tequila (like Patron. It’s worth it!)
  • 1 oz. Triple Sec
  • 1 oz. fresh squeezed lime juice
  • Ice
  • Salt for glass (optional)

Directions

  • Salt the rims of glasses if desired. To do so, pour salt onto a small plate, rub the rims of the glasses with lime and press them into the salt.
  • Put all ingredients in a shaker with ice
  • Shake up and strain into a glass
