Eggs and Bacon Tart

No gluten, no grains, no dairy.. just a pure protein power breakfast tart. Served with some sautéed veggies and fresh fruit and you’ll have a great meal!

Ingredients

  • 1 lb organic bacon
  • 1 cup thinly diced scallions, leaks or onion
  • 8 large eggs
  • salt and pepper to taste
  • Fresh chives for garnish

Directions

  • Oven to 350*
  • Cook bacon in skillet until browned, ~5 minutes
  • Remove and cool and then mince or finely chop
  • Pour off and discard fat from skillet
  • Return bacon with onions or scallions and saute for a few minutes
  • Beat eggs, pepper and salt
  • Put bacon/onion mixture in a round glass pan (8″ or 9″ works well) and pour egg mixture on it
  • Bake for 25-30 minutes or until firm
  • Let cool a bit and garnish with fresh chives

Paleo Rhubarb Strawberry Tart

It’s rhubarb season! My little crop of rhubarb has done very well this year, shooting up thick strong red stalks that make perfect sauce or pies!

Ingredients

For the crust

  • 1.5 cups nut flour (almond, cashew, etc)
  • 1/2 cup coconut flakes, unsweetened
  • 6 dates, pitted
  • 2 Tbsp coconut oil
  • 1/2 tsp almond extract and/or 1/2 tsp vanilla extract

For the filling

  • 2 cups chopped fresh rhubarb
  • 1 Tbsp water
  • 1-2 cups berries, fresh or frozen (raspberries, strawberries)
  • 4-6 dates, pitted
  • 1 tsp vanilla
  • Agave syrup (optional, to taste if more sweetness is desired)

Directions

  • Place all crust ingredients in a food processor and blend until a dough forms and everything is thoroughly mixed
  • Place all filling ingredients in a pot and bring to a boil, let simmer until fruit is soft, then process with a hand blender until it turns into a smooth puree
  • Pat crust down into a glass pie dish until you get an even and consistent thickness
  • Pour filling over crust and chill in fridge until ready to serve
  • Garnish with fresh berries, mint leaves or edible flowers
  • Enjoy with fresh coconut milk, or ice cream for a non paleo treat! 🙂

Carmelized Onion Tart

This is a delicious onion tart. Not quite paleo with the dairy, but great for breakfast, lunch or dinner!

Ingredients

  • 3 onions
  • 2 Tbsp butter
  • 5 eggs
  • 1/2 cup heavy cream, half’n’half, milk or plain Greek yogurt
  • 1 cup Swiss or cheddar cheese, shredded

Directions

  • Melt butter in large frying pan
  • Thinly slice onions by running them through the food processor on the slicer blade (takes <60 seconds)
  • Saute onions in butter for 30 mins on medium heat, stirring once in a while, until onions are translucent, soft, and started to brown and caramelize
  • If they have not started to brown, turn up heat and caramelize them a bit, stirring so as not to let them burn
  • While onions are cooking, whisk eggs and milk or yogurt
  • Cover glass pie pan with cooking spray, add onions, cheese, and pour egg/milk mixture evenly over it
  • Bake for 30 minutes on 350* or until golden brown around edges, bubbly and hot
  • Serve warm, great paired with soup and salad!
