Ham and Asparagus Fritatta

This is a a super easy frittata. Get creative with whatever meats or vegetables (and cheese!) you want to throw in there! Happy Mother’s Day tomorrow! 🙂

Ingredients
  • olive oil
  • 1/2 onion, finely chopped
  • 1 cup of fresh vegetables finely chopped, I like asparagus and zucchini
  • 1 cup diced meat, such as ham
  • 2 tablespoons fresh herbs, like chives or dill (optional)
  • 6-8 large eggs lightly beaten
  • Shredded cheese (optional)
  • Salt & pepper to taste
Directions
  • preheat oven to 350
  • heat oil in oven proof skillet over medium saute onion until translucent and then stir in herbs, veggies, meat and toss and saute for a few minutes
  • beat eggs with a little water and pour batter into pan
  • once bottom is firm use spatula to lift the frittata edge and tilt skillet so uncooked egg runs underneath
  • continue until mostly cooked
  • transfer skillet to oven and bake for ~5 minutes until toasted and bubbly on top

So, this isn’t a “keeping it real”, but lately Maya is into saying “Hi Friends!” to anyone we come across.  It is ridiculously cute!!!  Well, there were a bunch of teenagers (on lunch break??) at the park, and Maya kept saying “Hi Friends!  Hiiiiiii Friends?!”  Then, she looked at me (after they didn’t say hi back) and said “They’re shy…”  God, I love her.

In the blink of an eye…

Your life can change.  There is a family on Instagram that tragically lost their little boy.  It’s every parents worst nightmare, and yet there is nothing you can do to stop it.  NOTHING.  You cannot watch your children every minute of every day, and even if you are watching…things happen.  My heart breaks for the family, and yet I never met them.  So many people rallied together in honor of that sweet boy.  If you are on Instagram, you can search #redballoonsforryan and see how you can help.  His story was highlighted yesterday, but every day someone is going through loss, and my heart aches for anyone who has lost a child too soon… Hug your loved ones tight.

It should probably be noted that Maya had 3 complete meltdowns during this perfect day… :{  Potty training is still going pretty well, but she doesn’t want to wear a diaper/pull up now.  THROWS A FIT!  Well, I haven’t gotten a portable potty yet, so she has to.  NOT FUN.  Oh, and she was desperate to go swimming.  Puget Sound is FREEZING!!!  We had our feet in it, and it hurt!  She wasn’t fazed, and was NOT happy to be taken out.  Good times.  Anywho…didn’t get any pictures of all that 😉

May showers, bring…

 June flowers?  They certainly didn’t bring work… I had two shoots this weekend that both had to reschedule 😦  And so it begins… All that said, it was kind of nice.  My mother in law is in town, so we got to spend more time with her and my niece (who she came into town to watch)  Plus, it’s always nice to have time with the family on the weekends!

We literally ran outside for the 20 minutes that it wasn’t raining on Sunday to take these and take a little walk around the neighborhood before it poured again.

I mentioned on Instagram that 25% of the time I don’t take showers for these pictures, 60% of the time I haven’t washed my hair in a few days, 75% of the time I’m not wearing make up, and…100% of those are all true for the above images 😉  (all percentages give or take a few ;))  And THAT is why there are no close up shots hahaha.

Zucchini Almond Cake

This cake is lovely AND delicious! Zucchini makes it moist and almond flour makes it high in protein and gluten free. The tartness of cream cheese frosting balances out this coconut sugar sweetened cake.

Who knew kale plants had such pretty AND edible flowers! Great for cake decoration. 🙂

Ingredients

  • 1/2 stick unsalted butter, melted, plus 5 tablespoons, room temperature, plus more for pan
  • 1 1/2 cups almond flour (spooned and leveled)
  • 1/4 cup plus 2 tablespoons potato starch (or corn starch is fine)
  • 1 1/4 teaspoons gluten-free baking powder
  • dash sea salt
  • 3 large eggs, room temperature
  • 1/3 cup coconut sugar (or other sugar, white/brown)
  • 2 tsps pure vanilla extract
  • 1 cup finely grated zucchini (from 1 medium zucchini), squeezed of excess liquid
  • 8oz cream cheese, room temperature
  • 1/3 cup confectioners’ sugar
  • Edible flowers like Kale flowers (shown) or mint for garnish

Directions

  1. Preheat oven to 350 degrees. Butter an 8 or 9 inch round. Whisk together almond flour, potato starch, baking powder, and salt
  2. Set a large heatproof bowl over (not in) a pot with 1 inch barely simmering water. Add eggs and whisk until foamy, about 1 minute. Whisk in brown sugar and continue to whisk until mixture is fluffy and sugar is dissolved, 3 minutes. Remove bowl from pot and, using a mixer, whisk on high until mixture is thick and pale, 7 to 10 minutes (I did this in my food processor with the standard chopper blade)
  3. With a rubber spatula, gently fold in melted butter, flour mixture, 1 tablespoon vanilla, and zucchini. Pour into pan and bake until cake is golden brown and a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Let cake cool completely in pan on a wire rack. Invert onto a cake platter
  4. With mixer (or again I used the food processor here) beat together room-temperature butter, remaining 1 teaspoon vanilla, and cream cheese until fluffy, about 3 minutes. Add confectioners’ sugar and beat until combined. Spread on top of cake.

Keeping it Real…
Not going to lie.  These last few days have been hard.  Ok, the 2.5 days before I left on my girls weekend too.  Potty training is NO JOKE!  I haven’t really been pushing her thus far (by the recommendation of her urologist because she had reoccurring UTI’s-she is still on a low dose of antibiotics)
But…I always have her come in with me, and we’ve been talking about it for the last 6 months.  She actually got on the potty 6 months ago and went right away.  Of course I thought “Omg, why did everyone say this was so hard??  This will be a piece of cake!”  And then…she boycotted it.  HARD.  Like back bend, screaming, exorcist head spinning boycotted it.
So…I let it go.
Well, we went to Costco last week and saw some undies.  I thought I’d ask if she was interested.  (I’d asked before, and got a big NO!)  “Ooooooh, big girl panties!  I want horsies!  And…SULLY!” (Monsters Inc)  So, we got them both, grabbed a few books showing that Elmo goes on the potty and came home.  I told her she could only wear them if went on the potty.  Did she want to do that?  Yes!  Really?  Two days before I leave for my first girl’s weekend away??!! 
So, we made a sticker chart, got some stickers, wore the panties around the house, and she went!  BTW, I’m leaving out about 2+ hours of accumulative waiting in the bathroom :{  She managed to go twice the first day, twice on the floor, and a lot more in her diaper/pull up about 2.3 seconds after getting off the potty.
While I was gone, it got put on the back burner, and I’m really no further along than I was almost now a week ago.  Every time I want to throw in the towel, and admit that I’m totally fine with her wearing a diaper to high school if she wants, I think that this last week cannot be in vain!!  It’s a battle of the wills…and while she absolutely inherited my character, I’ve been playing this game much longer. 😉
