Ham and Asparagus Fritatta

This is a a super easy frittata. Get creative with whatever meats or vegetables (and cheese!) you want to throw in there! Happy Mother’s Day tomorrow! 🙂

Ingredients

olive oil
1/2 onion, finely chopped
1 cup of fresh vegetables finely chopped, I like asparagus and zucchini
1 cup diced meat, such as ham
2 tablespoons fresh herbs, like chives or dill (optional)
6-8 large eggs lightly beaten
Shredded cheese (optional)
Salt & pepper to taste

Directions

preheat oven to 350
heat oil in oven proof skillet over medium saute onion until translucent and then stir in herbs, veggies, meat and toss and saute for a few minutes
beat eggs with a little water and pour batter into pan
once bottom is firm use spatula to lift the frittata edge and tilt skillet so uncooked egg runs underneath
continue until mostly cooked
transfer skillet to oven and bake for ~5 minutes until toasted and bubbly on top

Seriously, these pants are so comfy, and they are so perfect when you need to wipe off mud from carrying your toddler! Showing off our Dancing with the Stars moves 😉 And…she’s off!! There was this little creek, and she kept running up to the path to get rocks to throw in it. Over, and over, and over… 🙂 “Rocks kissing” On me…

Side note for momma’s (or really for anyone!) These shirts from H&M are awesome in that they don’t wrinkle! I hugged and carried Maya around and you’d never know… WIN!!! I love silk tops, but not so practical for toddler days :{Normally, I don’t do black and whites on here, even though I usually only print in black and white. I messed up the exposure on this next one though because the sun came out from behind a cloud. Anywho…I LOVE it, so I saved it by turning it black and white. More info than anyone wanted/cared about,but there you go 🙂 And how about we just mark that under “photography tips” haha. So, this isn’t a “keeping it real”, but lately Maya is into saying “Hi Friends!” to anyone we come across. It is ridiculously cute!!! Well, there were a bunch of teenagers (on lunch break??) at the park, and Maya kept saying “Hi Friends! Hiiiiiii Friends?!” Then, she looked at me (after they didn’t say hi back) and said “They’re shy…” God, I love her.

Your life can change. There is a family on Instagram that tragically lost their little boy. It’s every parents worst nightmare, and yet there is nothing you can do to stop it. NOTHING. You cannot watch your children every minute of every day, and even if you are watching…things happen. My heart breaks for the family, and yet I never met them. So many people rallied together in honor of that sweet boy. If you are on Instagram, you can search #redballoonsforryan and see how you can help. His story was highlighted yesterday, but every day someone is going through loss, and my heart aches for anyone who has lost a child too soon… Hug your loved ones tight.

I wasn’t even sure if I would post any pictures today, but one of the main reasons I’m doing this is to have memories of myself with Maya. Yes, we started this blog around fashion and food, but it quickly became a way for me to document me and Maya’s days together too. I’ll forever be grateful to have these images… “Tickle me?!” She’s obsessed with being tickled. Done 🙂 Looking at “insects” aka ants 😉 Totally looks like she’s actually doing the yoyo, no? Another mullet top…

Yes, another business in the front party in the back top. So obsessed. I’ve had this top for a few years (no, it’s not a new obsession :)), and I wear it every summer. It was so cute. After this first shot, she turned around and held my hands and said “No, this way!” Done 🙂We had gone down the beach earlier in the day with some friends. We live about 10 minutes walking distance from this sandy beach, yet we rarely go. I hate all the crowds, but during the week, it’s not so bad. Maya LOVED it. She was just running up and down the beach. I for sure will leave my selfishness behind and be bringing her down here more often. Much better than just throwing rocks for an hour! Then back for some bubbles…All in all, a pretty good day! On me…

It should probably be noted that Maya had 3 complete meltdowns during this perfect day… :{ Potty training is still going pretty well, but she doesn’t want to wear a diaper/pull up now. THROWS A FIT! Well, I haven’t gotten a portable potty yet, so she has to. NOT FUN. Oh, and she was desperate to go swimming. Puget Sound is FREEZING!!! We had our feet in it, and it hurt! She wasn’t fazed, and was NOT happy to be taken out. Good times. Anywho…didn’t get any pictures of all that 😉

June flowers? They certainly didn’t bring work… I had two shoots this weekend that both had to reschedule 😦 And so it begins… All that said, it was kind of nice. My mother in law is in town, so we got to spend more time with her and my niece (who she came into town to watch) Plus, it’s always nice to have time with the family on the weekends!

We literally ran outside for the 20 minutes that it wasn’t raining on Sunday to take these and take a little walk around the neighborhood before it poured again.

I found these Dr. Martens at a thrift store a few weeks ago for $9. TOTAL flashback to my college days! I couldn’t decide if I totally loved them, or if they were totally nerdy. I let them sit for a while, and now I think I’ve decided that I love them! Maya is obsessed with rain boots. And…I’m obsessed with her underwear tushie 🙂 Yes, those are boys underwear. They came in the pack with Monster Inc undies, and she loooooves Monsters Inc. So, who cares? DYING over this coat that I thrifted (new with tag!!!) And of course she found the neighbors driveway that had the littlest of puddles 🙂 On me…

Keeping it Real…

I mentioned on Instagram that 25% of the time I don’t take showers for these pictures, 60% of the time I haven’t washed my hair in a few days, 75% of the time I’m not wearing make up, and…100% of those are all true for the above images 😉 (all percentages give or take a few ;)) And THAT is why there are no close up shots hahaha.

And…we don’t always make it back in time before the self timer goes off 🙂

Zucchini Almond Cake

This cake is lovely AND delicious! Zucchini makes it moist and almond flour makes it high in protein and gluten free. The tartness of cream cheese frosting balances out this coconut sugar sweetened cake.

Who knew kale plants had such pretty AND edible flowers! Great for cake decoration. 🙂

Ingredients

1/2 stick unsalted butter, melted, plus 5 tablespoons, room temperature, plus more for pan
1 1/2 cups almond flour (spooned and leveled)
1/4 cup plus 2 tablespoons potato starch (or corn starch is fine)
1 1/4 teaspoons gluten-free baking powder
dash sea salt
3 large eggs, room temperature
1/3 cup coconut sugar (or other sugar, white/brown)
2 tsps pure vanilla extract
1 cup finely grated zucchini (from 1 medium zucchini), squeezed of excess liquid
8oz cream cheese, room temperature
1/3 cup confectioners’ sugar
Edible flowers like Kale flowers (shown) or mint for garnish

Directions

Preheat oven to 350 degrees. Butter an 8 or 9 inch round. Whisk together almond flour, potato starch, baking powder, and salt
Set a large heatproof bowl over (not in) a pot with 1 inch barely simmering water. Add eggs and whisk until foamy, about 1 minute. Whisk in brown sugar and continue to whisk until mixture is fluffy and sugar is dissolved, 3 minutes. Remove bowl from pot and, using a mixer, whisk on high until mixture is thick and pale, 7 to 10 minutes (I did this in my food processor with the standard chopper blade)
With a rubber spatula, gently fold in melted butter, flour mixture, 1 tablespoon vanilla, and zucchini. Pour into pan and bake until cake is golden brown and a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Let cake cool completely in pan on a wire rack. Invert onto a cake platter
With mixer (or again I used the food processor here) beat together room-temperature butter, remaining 1 teaspoon vanilla, and cream cheese until fluffy, about 3 minutes. Add confectioners’ sugar and beat until combined. Spread on top of cake.

Girl’s Night Out!

I’ve mentioned my girl’s weekend a few times, but honestly only took pics one night. My camera is a tad cumbersome, so mainly it was iphone pics everywhere. And I mean everywhere haha. In other news. SOMEONE went potty in the toilet ALL BY HERSELF (with no prompting!!!) today! SO INCREDIBLY PROUD AND EXCITED!!! I’m not under any delusion that it will be smooth sailing from here on out, but still. YIPPEE!

Keeping it Real…

Not going to lie. These last few days have been hard. Ok, the 2.5 days before I left on my girls weekend too. Potty training is NO JOKE! I haven’t really been pushing her thus far (by the recommendation of her urologist because she had reoccurring UTI’s-she is still on a low dose of antibiotics)

But…I always have her come in with me, and we’ve been talking about it for the last 6 months. She actually got on the potty 6 months ago and went right away. Of course I thought “Omg, why did everyone say this was so hard?? This will be a piece of cake!” And then…she boycotted it. HARD. Like back bend, screaming, exorcist head spinning boycotted it.

So…I let it go.

Well, we went to Costco last week and saw some undies. I thought I’d ask if she was interested. (I’d asked before, and got a big NO!) “Ooooooh, big girl panties! I want horsies! And…SULLY!” (Monsters Inc) So, we got them both, grabbed a few books showing that Elmo goes on the potty and came home. I told her she could only wear them if went on the potty. Did she want to do that? Yes! Really? Two days before I leave for my first girl’s weekend away??!!

So, we made a sticker chart, got some stickers, wore the panties around the house, and she went! BTW, I’m leaving out about 2+ hours of accumulative waiting in the bathroom :{ She managed to go twice the first day, twice on the floor, and a lot more in her diaper/pull up about 2.3 seconds after getting off the potty.

While I was gone, it got put on the back burner, and I’m really no further along than I was almost now a week ago. Every time I want to throw in the towel, and admit that I’m totally fine with her wearing a diaper to high school if she wants, I think that this last week cannot be in vain!! It’s a battle of the wills…and while she absolutely inherited my character, I’ve been playing this game much longer. 😉
