It’s pumpkin season.. OK, I get a little obsessed when pumpkin lattes arrive and then it just takes off from there. Pumpkin pie, pumpkin cheesecake, pumpkin cookies, pumpkin bread, pumpkin frosted cupcakes :-), pumpkin soup, pumpkin curry.. I’ve been feeding fresh cooked pumpkin to baby Anders who is 7 months and chowing it down! And let’s not forget pumpkin seeds! Roasted and salted.. YUM!
Ingredients
- Pumpkin seeds (if you are digging them out of a pumpkin, first rinse and pat dry w/paper towels)
- Oil or cooking spray
- Salt
Directions
- Oven to 350*
- Toss pumpkin seeds with oil or just spray a large pan with some cooking spray
- Bake for 20 minutes or until you hear them start to pop or they start turning golden
- Salt

I roasted pumpkin seeds last weekend and it was the first time in years I’d had them. So good! I tried a few different seasoning, but simple salt was my favorite.

I was JUST thinking. I wonder what they would taste like with other seasonings!! Which ones did you try? I thought a spicy one might be good, but then had the weird thought of a sweet seasoning…?

I tossed all of them in just a little melted butter. I put chili powder on some and brown sugar and cinnamon on some others. None of them were bad, but just salt was my favorite. You should try experimenting!

Those are the combos I was thinking! Hmmm, maybe you just saved me some time haha. Or at least some options. Maybe raw sugar… Wasabi? Ok, I’m trying some! Thanks for the input!
